  • taco salad (minus the taco)

Ok, i am planinng this week to make me taco salad with ground beef, sour creme, salsa, and peppers. I might just make my own salsa, but how much sour creme i should add on? I heard it has about 2 carbs or something per teaspoon?? :confused

Sour cream falls under the "special foods" category. You are allowed 1 oz. per day.

      Hello,
I know this has nothing to do with what you asked but some pork rinds in your taco salad help make up for the no shell... :nod

Just have to add that this is one of my fav meals so far. I use ground beef, onion, lettuce, a little tomato, cheese, sour cream and a little taco sauce. Yummy.

I don't miss the shell at all.

This is also my favorite meal! I make it almost every week. I am curious about making my own salsa. Does anyone have a recipe?? Thanks!

Salsa is basically chopped tomato, pepper (chili or sweet), onion, lemon or lime juice and chopped cilantro.

Making your own is good because you'll know what's in it and you'll be able to adjust the "heat" from your pepper (chilis).

me too! I'm not a tomato person, so I get the lettuce that's already shreded and add some ground beef, cheese, and a little sour cream. Another good treat is to make it with sirloin strips or chicken breast sliced in strips, for a fajita salad. I fry the meat with some onions and peppers and it is wonderful! :yes
                Trying yet again!

That's what I had last night for dinner, kindof...I had hamburger, shredded cheese and salsa.

Like a taco salad w/o the salad and chips/shell.

My roommate's fiance laughed at me, but he thought it was "cool"...whatever...it was good.

I had a salad for lunch so I didn't put any in, but it was good anyway :yes

                    yummy

I like that also. Another favorite is a Gyro salad. I have to watch tho because that gyro meat can have fillers, I just count them in my daily carb intake and so far so good. Lisaj

                        MMM. Salsa and Taco Salads!

I use roma tomatoes, green onions, balsamic vinegar, chile powder and fresh garlic and a bit of cilantro. Put in food processor, blend to consistancy of preference. Add chile powder at the end to adjust the heat! Doesn't stick around long in our household! Yummm!!

Make taco shells or chips out of crispy fried shredded cheese! You can use your favorite, I like cheddar or Jalepeno Jack...you can make the taco shells look just like real taco shells! I like them better than the real ones! :joy

here's a recipe for doing it in the microwave, I personally do mine in a small non-stick fry pan!

I've heard allot of people talk about doing that w/ the shredded cheese to make the shells. It sounds good, but I have to say I haven't missed the chips at all. Not to mention that I would use all my cheese for the day that way and I love my cheese too much to not have the reg. stuff in my salad.

Also, has anyone had the fagitas from Don Pablos that are lower in carb and are made w/ squash and have lettuce wraps instead of the tortilla?

                            They are very good.
