jicama> induction friendly?

    Jicama looks like a turnip. Do not store in a plastic bag as it will rot. It is alot like a potato but it tastes fantastic, sweet and crunchy and lots of water in it. It is better raw then cooked, even my kids love it

      Moch oatmeal is the BOMB!!!
      ...and can be made induction friendly. Mmmm.
      Jicama is yummy and a great snack, good on salads, good for all kinds of things.
      Next to jicama moch oatmeal my 2nd fav is jicama w/ just a little lemon juice squirted on top. Very refreshing!

        i'm 25 years old, mom of two, ready to do this once and for all!
        note: i am breast-feeding, though my baby is nearly weaned, eating most solid food now. i am doing this diet with the knowledge, approval, and at the suggestion of my doctor and having done my homework. i will not discuss the matter in any of my posts. please don't bring it up.

          Off the top of my head, it goes something like this:
          Chop up 2 cups jicama, cover w/ water (twice as much water as jicima).
          Boil until half water is gone - like 1/2 as much water as you have jicama (hope that makes sense, LOL).
          Then add about 1/2 cup heave cream, splenda and cinnomon to taste. You can also add about 2 tbsp of butter - sometimes I do, sometimes I don't. Tastes good both ways. Then boil that until the liquid is about 1/2 gone.
          Then pulse in food processor until it's the consistancy of oatmeal. I usually add a few spoonfuls of faxmeal, it gives it more gooey consistancy, like oatmeal.
          When off induction it tasts good to add some slivered almonds, pecans or walnuts..
          I woulddn't suggest eating the whole thing - for one - too many carbs but also that's a LOT of fiber.. if you get my drift. LOL

            I slice jicama into thin strips
            and fry it in butter or peanut oil, then sprinkle with a little cinnamon.

                  A few tips...let the sliced jicama sit on a paper towel for a while to absorb some of the moisture.

                  As they are getting close to being "done", there is a very small window of time between ready and burned, although I like them a tiny bit burned, so keep your eye on it. They start slow but at the end it goes fast.

                  I fry in a pan, don't have a fryer.

                    I'm notorious for burning things, so thanks for the heads up there too!! LOL

                    I should have mentioned before with the jicama oatmeal - don't let all of the water boil down because it will burn and not only does it REALLY stink but it stained by stainless steel pot!!

                      jicama is a wonderful vegetable, just don't eat too much.

                      I eat it cold. To me it reminds me of apple, a little less sweet - but cool and crunchy. I didn't know what it was either when I started - now it's my favorite!
