  • How much is enough?

    I'm not really big on a lot of meats. I love baked chicken but I just can't do the skin - I can't even look at it.

    What I do is buy a huge thing of boneless, skinless chicken breasts, lightly season them, put a lot of olive oil over them and then bake them. I know that the olive oil doesn't provide enough fat compared to the skin. I then drain them and cool it (I also can't stand the flavor/texture if they cool in their own juices - I like my chicken dry) and individually store them in the freezer to just take one out and defrost it as I need it, this will be my meat for the day since the breasts are pretty big.

    Because I can't do skin, I am now making a mixture of mayo and some spicy brown mustard as a dip to dip my room temp chicken in. I actually prefer it at room temp and I like this dip.

    How much of this mayo do you think I would need to make up the proper portion of skin fat I"m not getting?

    I also use this dip and eat a great deal of my veggies raw - I like them that way as they provide the crunch I crave and I find this to be delicious. Not a lot - maybe a tablespoon for the whole day, perhaps a bit more. I sometimes wonder if I'm not getting enough fat, but so far the diet seems to be working.

    I want to do this right though.

    You're not the only person who doesn't eat chicken skin.

    If you're getting about 60-75% of your calories from fat, then you're doing good.

        I buy the boneless skinless too. DH will not eat the skin either. I just wish I could find it cheaper. Usually it's around $3 lb here. I did find a big fresh package at WM last week for .98lb but they are out of them this week. Should have bought more than one.

          As mentioned, you don't have to eat chicken skin. Often cooking in oil or butter will add enough fat. I eat a lot of white fishes/seafood and other leaner meats such as pork tenderloin or bison. I get my fats in by adding a tasty sauce (cream/butter based) or adding some butter to my veggies. Also, 1/2 of an avocado is an excellent way to get some good fats in.

          I can't answer your mayo dip question. A food tracker such as FitDay or Fatsecret will tell you if you are getting enough fats in your menus.

            It's easy enough to skin and bone your own chicken breast. Usually the bone-in, skin on are cheaper.

              Im a vegetarian and I'm still on atkins.
              =] and I most certainly do not eat chicken skin.
              Plus my fat percentage is normally 65% anyway.

                you will need to plug your foods into something like fitday to see how much fat you need. then just add one Tablespoon of mayo to your foods and see how it effects your totals. If that is your only fat source no egg yolks, cheese,avacados,olives, nor any other food containing fats you shouldn't need more then about 1/2 cup or 8 Tablespoons

                if you roast your chicken breats on a broiler pan you will get it drier and never even see the stuff that comes out of your chicken.
