Are these muffins Atkins Induction friendly?

  • Are these muffins Atkins Induction friendly?

    I've found these two recipes for Atkins, but I want to make totally sure they're okay for induction....can somebody tell me if they are? They seem to good to be true.


    Muffin in a Minute

    Serving Size: 1

    1/4 cup flax meal
    1/2 teaspoon baking powder
    1 packet splenda packet
    1 teaspoon cinnamon
    1 large egg
    1 teaspoon butter

    Put the dry ingredients in a coffee mug. Or a bowl for a different shape.

    Stir.

    Then add the egg and the butter. Mix.

    Microwave 1 minute (or more). Take out. slice, butter, eat. Set mug to soak immediately.

    Cream cheese would go nicely, too.

    Notes: 1.5 net carbs.


    Atkins Cheesecake Muffins
    2 (8 oz.) cream cheese

    ½ c. granular splenda or (1/4 cup davinci's syrup and a tsp. Fiberfit - for 0 carbs)

    2 eggs

    ½ tsp. vanilla or preferred flavoring

    Soften cream cheese about 30 seconds in the microwave. Add the rest of the ingredients. Beat with mixer until smooth. Pour the batter into 12 muffin tins that have been sprayed with a non-stick spray. Muffin papers sprayed with non-stick spray can also be used for easy removal. Bake at 350˚ for 20 minutes.

    Carb Count: (if using granulated splenda)

    Total Recipe: 26 carbs

    Per Muffin: 2 carbs

    The flax muffins are not 1.5 net carbs.

    1/4 cup flax meal (8.09 total carbs, 7.6 fiber) (30 g)
    1/2 teaspoon baking powder (0.64 net carbs)
    1 packet splenda packet (0.9 net carbs)
    1 teaspoon cinnamon (1.84 total carbs, 1.2 fiber)
    1 large egg (0.6 net carbs)
    1 teaspoon butter

    (total carbs is 12.07, fiber is 8.8; net carbs is 3.27)

    They are fine for Induction ... however, you should only have 1 per day ... and you NEED to drink an extra 8 ounces of water ... and unless you've been eating flax, you don't want to have these more than 3 times a week until you know how you tolerate flax.

        Whoever copied my work (while I didn't create the recipe, those are my comments) didn't include everything. Or it was from before I calculated all the net carbs exactly!

        Yes, they are both Induction friendly.

        I would consider the cheesecake ones less so, since they seem more desserty ... and getting rid of cravings and the desire for sweet is a goal of Induction.

          One thing to take into account when using recipes you find which state carb counts is that sometimes ingredients from different brands have different carb numbers.

          For example the cream cheese I buy has less carbs in it then the philadelphia brand that many people use. (This is why I use it ) So if I made the cream cheese muffin recipe my carb count per muffin would be different from some one else's made using philadelphia brand cream cheese.

            if you sub 1 ounce of cream cheese for the butter in MIM and cut the flax down to 2T instead of the 4 in 1/4th cup you will have the mock danish recipe which is induction legal and less carby.
