Kidney Beans?

  • Kidney Beans?

    Hey guys!

    I am on extended induction and am looking to make a chilli con carne tonight!

    So far ingredients wise im looking at:

    Mince Beef
    Onion
    Garlic
    Chilli's
    Chilli powder
    Tinned Tomatoes
    Stock

    I assume that all of the above will be ok, but I do like having kidney beans in my chilli con carne! Would Kidney Beans be acceptable? Also, might be helpful to add a small amount of cornflour to thicken, again, what do you think about that?

    Would really appreciate the advice!

    if you're still on induction... beans aren't ok until much later ..

    I made some 'chili'... with just meat, tomatoes, chili powder, garlic, pepper,.... but I added some induction veggies... (a lot of chopped celery... water chestnuts.. (they stay crunchy... and were good)....and some peppers.... (assorted green and red bell peppers, and other chili peppers I had in the freezer from my garden last summer)


    and ate it with a blob of sour cream...

    it's not 'real' chili... but it was good... ..

      Ok, that sounds pretty cool. Thanks for the advice! Bell peppers I think would actually go really nice! Do you fry them off first? or just boil them with everything else?

        Chili is a wonderful dish for Atkins, as long as it's beanless...unless you're at Rung 9 or on Maintenance. As for the peppers, I just add them when I put in all the other ingredients and turn on the fire. Then I fry up the burger, toss it in then turn the fire to low. If you make it early in the day, you can let it steep for several hours and it has a much richer taste and makes the veggies tender but not soggy. I miss the beans, but if you're serious about Atkins, it's a sacrifice you have to make, at least until Rung 9.

          I brown the beef in a skillet... then I dump it in a crock pot... then I add the seasoning..... and tomatoes (from the freezer.. I kept from my garden last summer)...

          after a few hours of simmering... I add the celery (I want it to be still firm)... and the peppers... (they're already soggy since they were frozen)... so I add them very last....and I don't fry them or anything ...


          if you're using fresh pepper.... you might add them sooner... just depends on how soft you want them...

              hmmm... i think I'll make up a batch too! Thanks for the idea.

                You can simmer the dish for a while longer to thicken it up by evaporating off some of the liquid.
                Wondering how to get 'most' of your net carbs from your induction veggies?

                    James, as mentioned the beans and corn flour are out until well into OWL. Just wanted to mention that tomatoes are pretty carby and it's easy to go over your 20g net carbs if not careful when using them in recipes.

                    Here's a chili recipe that uses roma tomatoes. You may prefer the tinned ones, but it will give you an idea of how much to use. HTH

                    Kidney beans are in OWL Rung 6; the corn flour is Rung 9. Even in Rung 6 the serving size for 5g net carbs is very small...about 2 TBS.

                      don't forgert to count the carbs in your spices too when you figure the carbs perserving.

                      I love chili and I ate it for so long without the beans before I got to rung 6 I don't miss them and now leave them out of the chile pot.

                        I had chilli this evening and it was delicious! And enough to have for some lunch later on in the week! Thanks for the advice guys...maybe I will start posting some of my recipes soon!
