    Hi everyone,
    I am going to a cook out this weekend to meet my dad's new girlfriend (GAG!!!!!). And, I'm bringing my own food. Can someone suggest a marinade for chicken tenders?? I wouls usually use Italian dressing......but, I'm looking for some suggestions. Maybe something with hot sauce (I love Texas Pete).....

    A great marinade for chicken (pork chops too). Apple juice, ginger, fresh garlic and olive oil, add some curry powder or red pepper flakes if you want the hot. I know, no juice on atkins. However as a marinade it will just give it some flavor, not add additional carbs. You can use orange juice too if you like in place of the apple juice in the marinade. If you poke holes in the chicken with a fork before you pour in the marinade it will flavor the chicken better. Enjoy!! :nod

      you definitely add carbs if you are using it as a marinade ... when you grill it the marinade will cling to the chicken or meat...if you poke holes the marinade will sink right into the meat...I would leave the juices out for marinades...here's one recipe I found I'll post others if I find them...

          A sauce I love for chicken -

          1/3 cup heavy cream
          1 oz cream cheese
          1 chicken boullian cube

          heat together till cheese is melted and pour over cooked chicken. You can customize this how you want.. portians are small so feel free to increase the recipe. You can add hot spices like red pepper or hot sauce while the cheese is melting. Very tasty!
