Any Low Carb Greek Recipies?

I live with my husband and my mother in law who are both 100% Greek. No meats allowed on Wednesday or Friday (Greek Orthadox) . Was looking for a low carb Spanikopita receipie for thoese days.

Is fish allowed those days? How about grilled Halloumi cheese and an eggplant or zucchini dish? Or grilled peppers filled with an avocado creme.
