  • 4 weeks in need help for bday celebration

    My DH and I have been following this WOE for 4 weeks now! I have been usings Lindas low carb recipes and have been enjoying the many options. My DH has lost 17lbs and I have lost 12. My DH's birthday is next week and I have been searching for a low carb ice cream cake- am I looking for something that does not exist?? I would love some suggestions... he would love something like brownie ice cream. I realize that this is not acceptable on extended induction but thought if we were trying to adopt this woe I may be able to "cheat" for the b-day but want to do it in a this woe way- if that makes sense. (i think there is a better option than just giving in and getting a carvel ice cream cake) I have been thrilled with all the options we have had and believe that with planning I can make this bday cake work. This forum has been wonderful, it has been so informative and people provide so much information- any suggestions would really be appreciated! Thanks!

    Do you guys like cheese cake? It would be very possible to make a legal induction cheese cake?

      The ice cream part is easier than the cake part, since a French vanilla ice cream can be made Atkins-friendly by swapping Splenda for sugar and using all heavy cream instead of milk. Cheesecake is also a wonderful idea - so many flavor possibilities are available with the use of flavor extracts, it's a very versatile dessert.
