  • Veggie Issues!! HELP!

    Im having some trouble getting all the veggies I need per day...I try to incorporate them into everything I eat but im still coming up short.

    Any suggestions on what veggies and how to add them in everyday?? Any KIND suggestions would be greatly appreciated!!

      Oh I know what you mean! It would be good for you to go through the induction list, pick out the veggies you like on those lists (the salad veggies and other veggies lists). From the veggies you picked out, look up the carb counts and the fiber so you can figure out their net carb counts. Try to eat the ones that have a high fiber count, because that's what will help you get enough fiber without having to eat a boatload of veggies.

      It's a difficult balance, but you can do it!

        Remember that you do not have to eat the vegetables raw - many of them shrink down into quite a small portion if you cook them. I often cut up sweet red peppers and sautéé them in butter then turn them into a sort of sauce or garnish to put onto meat. Or do the same with onions
        You can even cook lettuce - two cups of steamed lettuce turns into only a few spoonfuls!

          i bake onions and tomatoes + herbs + drizzled Olive Oil on top in the oven, this is a little high up in the carb dept, but it is something that everyone in our family likes. it's great w/ parmesan cheese and really simple to do. If i'm not including every fam member i bake zucchinni _ peppers, maybe mushrooms, or kohlrabi, and tomatoes + onions as above...less carby since lower carb vegetables replace most of the tomatoes + Onions in the first scenario.

          Sautee diced onions + mushrooms, add pepper, fresh parsley, fresh Basil, and try sprinkling parmesan cheese when u serve this.

          Try snacking on cucumbers, celery, fresh mushrooms, cherry tomatoes.

          Do some lettuce wraps ...wrap tuna or eggsalad or anythimg that seems good to you in a Romaine lettuce leaf or two.

          i feel like a bit of a hypocrit saying this, but look through the list and try a vegetable or two that's new to you. I'm a picky eater so i suggest this w/ caution, but even i have expanded the variety of vegetables in my diet and most veggies taste good w/ melted cheese or a gentle cheese sauce.

            I used to have 3 categories of food on my plate: protein, starch & veggie. Now that the starch is gone, I have 2 veggies - it makes my meal look more complete

            My favorites are peppers cut into strips dipped in salad dressing (or snow peas, sliced cucumber...).
