Mascarpone cheese ??

Does anyone know the carb count of Mascarpone Cheese ?

Its really easy to make with milk - you put it to boil and then the moment it bubbles - add lemon and keep stirrng- and it turns into cheese.

Made with milk? I would guess you'd have to count the carbs in the milk--can you make it with heavy cream?

According to my carb counter: Classica Domestic has 1 carb per ounce of cheese. Galbani Imported also has 1.

But are those the same as making it yourself using regular milk? that wud be the question!

Just did a search and found this recipe. http://www.pastrywiz.com/season/tira2.htm

The recipe calls for 1 quart of whipping cream, (26.4 carbs) to make 1 pound of cheese. The carb count would then be 1.65 per ounce. 26.4 divided by 16.

Whole milk has 45.6 carbs per quart. That would be 2.85 per ounce. I'd go with the whipping cream. Gotta taste better and creamier than whole milk.

OMG!!! They sell marscarpone here.....I thought it was a cream type stuff!!!! I used to mix it into my hot coco!!!! :yikes
