  • do you know your magic beans?

I'm being lazy. does anyone here happen to know what the lowest carb legume choices are?

I've got a leftover hambone that I would like to do some sort of crockpot dish with.

I don't know about the legume thing....but somebody, I think not2late, posted a recipe for a mock pea soup that looked really good and I think induction friendly! Maybe search the recipes tab.

Soybeans and lupini beans are low in carbs.

The bean soup Isabeau is talking about is an Induction friendly (definitely OWL Rung 1 friendly!) mock split pea soup made from frozen green beans.

All you do is use green beans in place of the split peas in a regular split pea soup recipe. Then when the soup is cooked, puree most of soup, but leave a cup or so sort of chunky (if you like some texture in your split pea soup). This stuff really tastes like split pea soup, looks like split pea soup and I've served it to non-low carbers who were fooled by it too.

you can stretch those beans with added other low carb veggies to make a soup Ham bones are great for flavoring grens too.

I use redbeans cause I can't do soy but cooked canned black soybeans can be very very low carb just watch the ingredients added to the cans.

        Happy low carbing.
