  • Success in Denver!!

    Hey All,
    I'm back from my weekend in Denver (daughter's graduation) AND I DID IT!!! I had a wonderful weekend and stayed on program. I ate luscious steaks, glorious salads and steamed veggies. I breakfasted on delicious omlets and sausage along with some mornings just an Atkins shake and was content.
    I'm about to have my monthlies though so I will not weigh or take my measurements until next Sunday.

      Thanks! I'll confess that I was one of those people! I'm so glad I was able to hang in there. There were times when I wanted to 'throw in the towel' but with ALOT of prayer and the support of my family I was able to stay the course!

                Hey "sallyslimsoon"!
                Thanks for taking the time to share! You are so right about it being difficult to stick to the plan when you go away. Before I began Atkins this time I would ALWAYS blow it on vacations or trips then I'd give myself that old 'I'll start again on Monday.' Only Monday never came!
                I'm glad that I seem to have a different mindset this time.

                      Thanks so much! It was a challenge but I have to admit I enjoyed myself because I didn't have to cook or clean up!! There are so many low carb options out there now! You need only do a little planning! I learned alot about how to make a good Cobb Salad while there. I can't wait to eat more of it here at home.
                      (Western Nebraska says hello Betty! It was weird being out there knowing that I'll be out there again in about two weeks for BRAN!)

                        Yvw Jade. On the 'difficult when away' subject...another challenge is going out to dinner to friends. I live in Italy where food is a real ritual... and so much is "pane, pasta and pizza"... all wonderful, especially when home cooked. So far I'm hanging in there by the skin of my teeth :yikes , and haven't cheated yet. Got my fingers tightly crossed for the future though, I can tell you!

                        This board helps tremendously though. Sort of, recharges the willpower!

                          Hey Sal,
                          Yikes! That WOULD be a challenge! Have you checked out any of the recipes on this board? There are some ways to have the 'taste' of Italy without all of the carbs.

                            Tried a 'pizza' recipe the other day actually Jade... and it wasn't half bad! Definitely one to repeat! The base made with eggs and cheese. It's lurking around the recipes section, somewhere. Not the same...but good, and with that 'taste of Italy' you mentioned.

                              That sounds like the Biker goddess's pizza. I think the thread might have been culled.
                              I halved the recipe (I think the original was for two pizzas) so my version goes like this:

                              4 oz softened cream cheese
                              4 eggs
                              1/3 cup heavy cream
                              1/4 cup parmesan cheese (grated)
                              1 tbs chives
                              1/2 tsp Italian or pizza seasoning
                              2 cups shredded cheese (I use mozzarella /cheddar mix)
                              1/2 tsp wet garlic or 1/4 tsp garlic powder
                              1/2 cup lowest carb tomato or pizza sauce (I sometimes use heavy cream mixed with some chives instead)
                              1 cup mozzarella cheese
                              Toppings to taste (pepperoni, sausage, green olives, whatever!)

                              Beat together cream cheese and eggs till smooth.
                              Add cream, parmesan cheese and spices
                              Spray 13x9 glass baking dish with oil
                              Put 2 cups of shredded cheese in dish and pour egg mixt. over
                              Bake at 375 for 30 minutes
                              Spread with sauce and then add your toppings
                              Cover with mozzarella cheese
                              Bake till browning and bubbly
                              Let stand for 5 minutes or so.
