  • Nuts and Seeds!

    Moving on to the nuts and seeds rung!

    Over the last few weeks, I have been enjoying OWL. I started with adding more veggies. Then I took advantage of the dairy rung, and had some vanilla cream yogurt and lc ice cream, with no problems. I recently purchased a quart of butter pecan Blue Bunny, and I love it. So far, I have only tried pecans in the nut rung--I'm thinking of maybe making a splenda cheesecake with a crushed pecan crust!

    Sounds like you are doing great on OWL !! Aren't the increased food choices wonderful??

      Try the hulled sunflower seeds. They are good and 1/4 cup is about 5 carbs. Bryer's makes a Butter Pecan low carb ice cream with pecans in it that has net carbs of 4 per serving (1/2 cup). It is delicious. Good luck on your nuts and seeds rung.

        Love2bee-I really do love all the new choices that are available to me now! It makes you feel less restricted.

        Pumkin50-If you have not, you've got to try the Blue Bunny Butter Pecan--it's got 3g net carbs per 1/2 cup serving, and is just too delicious. Butter Pecan had been a favorite of mine for a long long time. I'm so glad I get to enjoy it with this woe!

          you can try out other nuts and seeds too. Just be aware that cashews are terribly "high" in carbs for the 1 ounce amount.

          Otherwise, you can do alot with nuts: combine finely chopped or ground nuts with parmesan cheese for breading meats and veggies, use as a topping for yogurt/cottage cheese/pumpkin pie/berry cobblers/etc., snack on them, put them in salads, etc.

            I don't think we get Blue Bunny ice cream here in Nashville, I would really like to try it cause I love Butter Pecan as well. But then I love pecan anything.

                Don't forget you can grind up your nuts and make nut butters and if you control thegrind you can make flour from toasted almonds.
