Re: Need a cheesecake recipe
I just use the recipe on the packages of Philadelphia cream cheese, substituting an artificial sweetener for the sugar and, of course, substituting ground nuts for the crust.

Re: Need a cheesecake recipe
Best cheesecake recipe that I make over and over again, especially for entertaining:
3 8oz containers cream cheese
3 eggs
2/3 cup Splenda
3 capfuls of Vanilla
2-3 capfuls of almond extract
Combine all & blend well. Place in Pam sprayed springform pan,
Bake 350 degrees for 45 minutes, cake will be slightly brown & move away from the sides of pan!
Refrigerate overnight,,,,tastes much better the next day
I serve it with whipped cream, and thawed frozen or fresh berries.
Enjoy, it's wonderfully YUMMY!!!

Re: Need a cheesecake recipe
Here is the best one I have found. If you need a crust, a blind baked nut (+splenda) crust works well.
Cheesecake
1/3 cup butter, melted
20 packets Splenda
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
2 tsp. vanilla
3 eggs
1 cup Sour Cream
Preparation:
Butter bottom and 2-1/2-inches up side of 8 or 9-inch springform pan; set aside.
BEAT cream cheese, remaining sugar and vanilla in bowl with electric mixer on high speed until creamy. Beat in eggs, one at a time. Blend in sour cream. Spread in prepared pan.
BAKE at 350°F for 60 to 70 minutes or until center is set. Turn off oven. Leaving door slightly ajar, leave cheesecake in oven 1 hour. Remove from oven; cool completely. Refrigerate 4 hours or overnight. Remove side of pan.Kent - 35-M-6'4"
