    Since I am having a hard time finding Almond Flour, and I don't do the buying over the internet, I have brought soy flour, can those who are doing atkins use wheat flour or could someone tell me what is the best flour to use, and also since starting this woe the hardest thing for me is enjoying desserts, because most of the ones I want to make you have to use splenda and I can't do splenda it causes me one major headache that last for awhile, and also what is the best milk to use since I can't have CarbCount.

    You can make your own almond flour. Just toss some almonds in a coffee grinder and VIOLA! Problem solved

    As for milk, you can use heavy cream watered down. That's what I do And you can try using Stevia instead of Splenda as well.

      you can use any protein isolate as flour like whey soy eg wheat or rice BUT they will not bake exactkly like flour as they don't make gluten. you can grind your own nuts for flour. I;ve done that with almonds and pecans just do small batches and pulse it so you don't end up with nut butter.

      you can also bread stuff with parmegan cheese for baking or frying.

        It really depends what you want to use those flours for. Soy and almond flours lack the starch wheat flour has--the starch along with the wheat protein gives flour based foods, like breads, elasticity. Elasticity is needed in bread or cakes because that is what helps to trap the gas bubbles which gives the finished product the airy, spongy texture.

        So if you want to use those flours for breading or coating, they will be fine flour substitutes. Or if you want to use those flours for steussel toppings, they will be fine.

        If you want to simulate a baguette, you'll have some difficulty with them. Best to look up low carb recipes or gluten-free recipes for breads, etc. to get an idea how to use them.

          just adding, you can make your own almond flour---just grind almonds in a food processor or coffee grinder. Do this in small amounts and be sure to carefully watch the grinding so you don't end up with almond butter.

          Also you can substitute a mixture of heavy cream and water for milk. Likewise, you can substitute a combination of sour cream or yogurt and water for milk too.
