    Hey guys! I tried jicamam for the first time about 2 months ago and loved it...I made it two ways: thinly sliced and deep fried like potato chips and cut like french fries and deep fried. I cooked then for a very long time, but they don't really crisp up. I covered them in a legal BBQ rub and they were very good, but anyone got any tips for crisping them up a bit more? thanks!

      Higgies, what do you mean by "crisp", do you mean "brown"? Because my jicamas never get soft. I pan fry them with butter and olive oil, garlic and onion sometimes. I also dice them pretty small. Let me find a picture hold on.
      OK here is the pic. Otherwise I "oven fry" them in a glass pan again with butter and olive oil. Takes about an hour I guess to get them browned up nice. And don't forget to turn them after a while.

          OOh, those look good! I gathered it took a while to get them crispy. I deep-fried them for about 15 minutes and they just got sorta not limp. I'll try your way next time!

            I did a thourough search of our local 'ethnic' shops and no-one knew what i was talking about

              Thanks Elizellen. The vegatable adventure continues... I fried some plantain, I am pretty sure its too starchy for now and it wasn't something I loved. Bok choy in a thai style broth was excellent. This weeks challenges are chinese leaf and celeriac.
