  • How bad is this?

    My sister in law had a dinner party. She made a wonderful veggie antipasto salad. I asked for the ingredients the next day as I ate some. How bad is it since I want to make it again. I never really ate these kinds of veggies before so I am excited to be eating new things. Please let me know.

    Here it is:
    1 bunch of asparagus, snap off ends, put in plastic bag
    1 small container of white mushrooms, clean and put in same plastic bag
    Add balsamic vinegar to cover and a dash of olive oil and a dash of garlic powder. Let keep in bag for 1 hour
    1 can of artichoke hearts--cut
    3/4 cup of sundried tomatoes--rehydrated, add to artichokes
    1 jar of pepperocini, add to above
    1 small jar of pitted black olives, add to above
    2 red peppers sliced--(roasted yourself or bought roasted), add to above

    After one hour, put asparagus and mushrooms on broiler pan, broil until just golden brown--about 8 minutes
    Cool and add to artichoke mixture.

    Add, mozzarella cheese and some balsamic vinegar and a little olive oil.
    I will stay on my diet. I will get healthy and lose weight. There is nothing I could eat or drink that tastes as good as how I feel at this moment on this WOE ~ nothing!

    Sounds absolutely fantastic!! Doesn't look bad at all. The only thing in it I'd be the least bit hedgy about is the balsamic vinegar, and in OWL/Pre-Maintenance/Maintenance, it wouldn't even really cause me pause!

    General rule of thumb for success: If it requires a degree in chemical engineering to pronounce it, you probably shouldn't eat it.

      I'm assuming your on the First Rung of OWL right? Well, Rung one is more Induction veggies. So to see if something is legal for Rung One, you consult the Induction Acceptable Foods List. If it's on the list it's legal for Rung One. You only need to watch your portion size.

        Yeahhhhh! What would you consider a 5 carb portion for a mix of veggies like this?

          Personally? The first time I made it I'd weigh everything out on my trusty scale as I made the recipe, then add it all into Fitday to get a recipe total, and then divide it by portions.

          Know what I mean? It's a pain to do, but you only have to do it once.

            Depends....

            I would probably eat the asparagus and artichokes from the salad only. So I'd have to figure out how much of the asparagus and artichokes would be 5 net carbs.

            If you're not as picky as I am, the best thing to do is plug the foods into fitday.com and you'll get the carb count for the entire recipe. Then you do some math to figure out how many servings you can get out of that recipe and how many net carbs each serving has.

              Great. I'll do that sometime today and let everyone know!

                Uh oh. I guessed at some of the amounts in fit day. And I did not include the mushrooms and olives because I don't eat them and I am getting approximately 10 net carbs for 1/10 of the recipe. I am going to make it today and see how much 1/10th actually adds up to be. I used 1/4 cup of balsamic in the fitday or actually the vinegar, sugar and water button which really raised it. But you are marinating it in the vinegar but not necessarily eating all of it so I don't know if that would help??
