Is anyone else using ground almonds?
These are fantastic to use as a replacement for breadcrumbs when coating chicken pieces or pork chops. Just spice them up however you want and either rub it on the meat, or dredge the meat in it. It doesn't brown up like bread crumbs, but who really cares. I'll add cayenne or turmeric/curry/cajun spice if I want colour..it's no big deal.
I don't have a thick crust of it on the meat, mind you, just enough to thinly coat it.
I did chicken cordon bleu Moochie style the other night with swiss cheese rolled in black forest ham rolled in flattened out chicken breasts. I S&P'd some ground almonds, added some garlic salt and some melted butter and rubbed that on. Baked them up...oh gosh..really good.
Anyway, ground almonds...great stuff.
