  • i'm addicted...my fav low carb food

    to mock mashed potatoes. i could literally eat those with every meal. i realized how bad it is when i was preparing my dinner just now. i wanted just a bowl of mashed cauliflower and tea. I had to remind myself to have a piece of meat. what low carb yummy are you addicted to?

    Spaghetti squash for me. I really have to watch my portion control with this wonderful veggie....

      i'm trying spaghetti squash tonight. how do you prepare yours? i was thinking like regular spaghetti dinner with beef, but not sure about sauce. any ideas?

        I love it aswell. Sometimes I also add a bit of brocolli to it. It gives it a bit of extra colour.

        I have since re-gained a bit of weight, but that is soon to be coming off again!

            I eat spaghetti squash with homemade tomato sauce or alfredo sauce. Yummmy!!! Throw some ricotta on it as well. MMMmmm, I think I know what's for dinner!!

              barbde i went to the market last night looking for spaghetti sqash and couldn't find it. is it sold in the regular markets where you are? or should i be checking the farmers markets?

                    I get it at my local grocery store with all the other squashes.

                    I slice mine in half lengthwise, scoop out all the seeds and nuke it for 7-9 minutes in the microwave oven with a bit of water in it, on a plate covered with a paper towel. It steams it.

                    Scoop out the cooked squash and put cheesesauce (ala mac n cheese) or a low carb red sauce. You can put butter, salt and pepper on it and eat it that way also.

                    Hope you are able to find it! Im sure you will like it.

                      My main favorites are: pizza toppings (any kind), bacon, broccoli with cheese and green bean casserole. Oh! and any FATTY peice of well marinated beef like tri-tip or t-bone...mmmmmmmmmm.......

                              I could eat a bacon cheddar burger (no bun) every day of the week, I swear...lol...mmm...all melty and yummy...
