have never used most of the cheese in the dairy rung, anyone good any good ideas/recipies to incorporate them?

Cottage cheese and ricotta are the two fresh cheeses that are easy to find in most supermarkets. They are relatively bland tasting cheeses so you can use them for savory dishes like the cheese filling in low carb lasagna, or in sweeter dishes. By the way, if you go to the Induction Forum and look at the sticky called "Induction Recipe Basics" there is a recipe for Atkins Revolution Rolls. The original recipe used cottage cheese. But I find that ricotta works much better for that particular recipe than cottage cheese or cream cheese.~Megs~

surely adding 5g worth of cheese into your menu is going to add extra calories and make it harder to lose?

5 net carbs of cottage cheese is about 1/2 cup of cottage cheese--- at least the generic brand I eat. I think the calories for that serving is about 110 -120.
Anyhow this is where the balancing act of OWL comes into play. At the same time, you are "naturally decreasing the amount of fat you are consuming", but adding a fat food like cottage cheese. You eat 5 net carbs of cottage cheese in place of the 1 or 2 ounces of Swiss cheese you have as an afternoon snack.
Things like cottage cheese can be whirled in the blender and used as the base for dips (replacing mayonnaise and/or sour cream). So think of it this way, you make a dip using the cottage cheese and you can eat that cottage cheese-based dip with your 5 net carbs of celery stick or cucumber spears.
Let's say you like the "mock danish" recipe from Induction. If you want to eat 5 nets of cottage cheese, instead of making the mock danish with cream cheese, use cottage cheese instead.
Need a creamy cheese sauce for your 5 net carbs of spaghetti squash? Instead of eating buttered spaghetti squash with cottage cheese for dessert, whirl the cottage cheese in a blender, mix in a tablespoon of parmesan cheese, pour it on your 5 net carbs of spaghetti squash and heat it in the microwave or in the oven until the cheese sauce is hot.
By substituting the dairy rung foods for the added fats you are already eating, you aren't increasing your total fat intake by "another" serving--you are keeping it the same or slightly lower.
