  • After so long on induction

What are some of your favourite recipes that you added when you started the OWL veggie rung?

Tomorrow, I'm going to have a good helping of cabbage sauteed with spicy ground beef and tomatoes.

I love vegetable soups: creamy mushroom, pumpkin, creamy zucchini, etc. They are a great way to get those 5 net carbs. Plus they are filling.

I also found that Rung 1 OWL meant I could have gravy and stews that didn't have the weird slimy texture the gum thickeners give.

    Here's the recipe:
    http://www.atkinsdietbulletinboard.c...279#post370279

For plain gravy, saute the onion and celery (or mushroom) mixture, then simmer it in liquid, like chicken or beef stock. Puree until smooth. You don't lose the nutrients of the veggies and you don't lose the fiber.

Thanks Megs, what a wonderful idea to use the veggies to make gravy.

oh I love to make veggie sauces like roasted red pepper, tomato, and rhubard spread cooked rhubard nutmeg and y'all will need some of your sweetener mixed with cream cheese, and i love roasted eggplant and garlic roasted and pureed with olive oil as a dip or spread. moving to OWL let me have more fo the great tasting veggies.

What a great time to move to OWl with BBQ season starting and all the veggies you can grill.

And you can make gumbo and veggie stews when we start induction 3 cups seems like a lot but adfter extended induction it seems so limititng.

Hi Noorian, glad to see that you're back. I decided to move to OWL after our extended boot camp, because I wanted to see how my body would handle it. I will be very careful, because I need to make sure that my blood sugars stay in line (I am diabetic). Every thing for me is small changes, then evaluate.

Thanks for the ideas 2Big, they sound wonderful. I am toying with the idea of moving to the dairy rung next week.

Congratulations on "moving on up"! I love to read about people moving into OWL and up the rungs. OWL to me is the best part of Atkins! Be anxious to hear your progress!

Re: After so long on induction

NO do not skip the veggie rung!!!!! According to Dr Atkins last interview on TV before he died goalies eat 6-8 cups of veggies a day so he meant for us to eat them!!!

spend some time letting your body tell you which induction acceptable veggies it can handle in higher amounts and which it cant. the fresh dairy rung will still be there and it is a very slippery slope for us. rememebr just cause you can have have 5 net carbs of cream doesn't mean you HAVE to have it!

Yes, 2 big is correct. The HAVE to applies to rung 5 for alcohol (meaning wine).

Re: After so long on induction

2Big, I'm confused (wouldn't be the first time). I thought that being in the veggie rung for 2 weeks was enough, especially as I have been on modified induction for 2 years.

How many weeks are we supposed to stay in a rung?

Bren, although I would love the wine, I can't drink because of the medications that I take

I was looking forward to eating yogurt on the dairy rung, and to having a little ricotta with my eggplant lasagna.

Re: After so long on induction

One good reason for repeating any rung is to see if any of the foods on that rung that you are likely to eat will affect you badly.
So if there are any veggies on the first rung that you didnt eat on induction - either because they were fairly high in carbs or because they were not in season etc it is the ideal time to test their effect on you.
Also by adding several 'rungsworths' of veggies it will allow you to eat more portions of vegetables in a day. Dr Atkins suggested that we will end up by eating probably 8 portions a day in maintenance.
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!
