Hi everyone, today I have started the second rung which is dairy and I was reading one of the threads on what I can have on this rung and 2 things listed were milk and low-carb ice cream. Can I have those 2 things on this rung and if so what kind of Milk?

i drink hoods low carb. a little pricey but i like it. the chocolate milk is really good. they can be used in sugar free pudding. some use them with crushed ice to make a smoothie type drink. as always though, watch the carb counts. it's going to be higher. watch the serving amounts too. some think "oh good! i get ice cream!" and then go overboard on the servings.
i'd stay away from the high sugar alcohol ice creams. yes i have done them but most people don't handle the SA very well. best to stay away from. i do think there is substitute ice cream in the food section, if i'm not mistaken.

Yes, indeed, you can make your own ice cream very easily! I don't remember where I got this recipe, whether it was here or another board--I think it was here, but it's saved in my recipe file on my pc and it's great. It's so easy... we make ours with a raspberry (berry rung of course) puree for raspberry ice cream. Yum!
"Ziploc" Vanilla Ice Cream
Recipe By :RLP1
Categories esserts
1 tablespoon artificial sweetener
1/2 teaspoon Vanilla Extract
1/2 cup Heavy Cream
6 tablespoons Table Salt
3 cups Ice
1 Sandwich Sized Ziploc Bag
1 Gallon Sized Ziploc Bag
(No Ice Cream Maker Needed. It really works, trust me!!)
In the sandwich sized ziploc, combine the sugar substitute, vanilla
extract and heavy cream. Seal the bag and shake lightly to mix ingredients.
In the gallon sized ziploc bag, add 3 cups of ice (or fill half the bag
with ice)and add 6 tablespoons of table salt.
Place the seal sandwich sized bag into the gallon bag and seal the
gallon bag. Shake the entire contents for at least 4 minutes (shake longer
for harder ice cream).
Once desired hardness has been achieved, remove smaller baggies and
rinse throughly with cold water (if you miss this step, you may wind up with
salty ice cream!)
Recipe makes about a 1/2 cup of ice cream.
I have doubled the recipe and it still works well. I am also sure that
you can add additional ingredients (cocoa powder, etc) to create different
flavors of ice cream. Lastly for our friends and relatives who aren't
on low carb diets, they can use milk and regular sugar rather than the
cream and sugar substitute.

check your bag for any leaks before you put it in the salt and ice bag cause many leak at the corners
And remember as Dr Atkins said desserts and sweets are occasional treats not everyday events.

the ice cream recipe is by FAR the best ice cream Ive had. EVER. and that includes ben and jerries and all the rest! Ive added a bit of cocoa powder (use the european dark stuff!) to mine and its FABULOUS. I discovered last night that it freezes hard as a brick bat but is still fabulous. give that one a shot as an occasional treat, you wont be disappointed.Female, 30

That sounds great! But here's my question?? I need to get my 5 extra carbs worth of dairy in each day what and how much can I eat to do that? I know I'm allowed cottage cheese which is pretty good if ya mix a packet of Splenda in it but I was hoping a glass of the Hood's Low Carb Milk would give me my 5. Honestly though since I've started OWL I am completely stuffed, I can barely get in my 5 extra veggie carbs in. I didn't even get to lunch today because I was still full from breakfast! I did however eat some cheese as a snack because I didn't want to completely go without eating. So if you guys have any ideas on what dairy items I can eat to get my 5 carbs let me know!

I don't drink milk...but the way I added dairy in was to add yogurt. I found one made by Blue Bunny that is low carb. 5 net carbs for the 6 oz cup. It's sweetened with sucralose and the berries...and they have a plain vanilla one too (I havent' tried that one yet). I wasn't a yogurt eater until my dairy rung of Atkins LOL Now I love it.
I also like to add cottage cheese or ricotta to my tomato dishes--mock lasagne.
George Stella's New York Ricotta cheesecake is FABULOUS with cream cheese and ricotta cheese. If you can--try that recipe. Its soooooooooo worth it.~Joy

Megs? Where are you? OK, I'll try. OWL is really the testing ground for how you're going to be affected be certain foods, so you'll already know that when you get to the real world (goal
). So, if dairy isn't a large part of your diet, you don't need to force those 5 carbs in to your diet. I did find cheesecake to be an essential part of this WOE, so that's where several of mine came from, or slightly more cheese in various hot dish type recipes. I did drink regular milk in 5 carb increments (against ADBB advice since it's straight milk sugars), and found that little bit extremely satisfying, and very much like what I will be eating/drinking once I do reach my goal. But, I ramble. My point is you don't have to force it. If your diet will not include any more dairy than the cheese you're already doing, spend the extra time experimenting with other veggies at that carb level (likely 30). I'm sure Meg and the stickies can explain it better...
