Re: pancakes
3 Large eggs
3 Tablespoons of Cream cheese (Philadelphia for example)
a pinch of nutmeg
a pinch of cinnamon.
Whisk all together and it gives you a batter completely induction friendly...... then cook the same as you would normally. THey are lovely with a little splenda sprinkled over them.

It never ceases to amaze me of how easy and how effective this ***diet*** is!!
I have since re-gained a bit of weight, but that is soon to be coming off again!

Re: pancakes
Bootlover, I kind of made a variation on the flax meal pancakes that are in the recipe request section and replaced half the amount of flax meal with soy flour. You should really only do this if you're on the legumes rung (which I skipped alcohol for and just started).
My recipe for one is:
2T of flax meal
2T of soy flour
1T of sour cream
1/4t of baking powder
1T of veg oil
1T of water
1 egg
Put a very light coating of oil (I smear around 1/2 teaspoon) on the bottom of a non stick pan and preheat it on Medium heat. Add your batter and place the lid on. Let them sit for about 3 minutes, flip and replace cover...2-3minutes on the other side.
That's the basic. You add variations depending on your taste/rungs. I sprinkle in 1 packet of splenda and add some fresh blueberries...so yummy. You can also add a bit of cinnamon and nutmeg. It's all up to you!
I made them this morning with cinnamon and nutmeg. It yields 3 smallish pancakes but they really fill me up! This is the nutritional information I got from plugging it into fitday:
Calories: 431
Fat: 37g
Sat: 7g
Poly: 10g
Mono: 8g
Carbs: 16g (includes 2g for splenda and cinnamon)
Fiber: 9g

Hope this helps!
