  • My next step up the Ladder

    Ok, I have added more veggies and I think i am ready to move up one more rung but I predict a problem...

    Next would be adding more fresh cheeses but I am trying to reduce the amount I am currently eating (I love the stuff TOO much). So, Seeds are and Nuts are next. I love almonds so I am hoping I will not have an over-eating problem with these as well. I am planning on by a small bag and then go from there. I am think of getting shaved almonds to put on my salads. I am affraid if I eat them by themselves, I will overeat.

    Next question is about Carb Countdown milk. I looked for a thread on this product but couldn't find one. I was thinking of adding 4-8oz a day since I am going to be cutting out some of my chesses anyways. I will probably elimanate one of my servings of cream then too.

    Please let me know if any of you see a problem or a concern with any of this..

    I think the easiest way to practice portion control on both the dairy rung and the nuts rung is to incorporate them with other ingredients in a dish.

    Here are some examples:

    For the Dairy rung:
    New York Style Ricotta cheesecake (to DIE for)
    Cottage or Ricotta cheese as an ingredient in italian style dishes--vegetable lasagne.
    Greek Yogurt or carb controlled yogurt (I like the Blue Bunny carb control)
    I'm not a milk drinker, so that didn't appeal to me, but you might want to try using half n half instead of whole cream at the dairy rung.

    For the nuts rung:
    Use nuts as garnish on entree's or salads, use seeds on salads
    Grind up almonds in a coffee grinder and make almond flour. Mix with parmesan cheese to make a breading for fried chicken, vegetables, etc. With your extra carbs from the veggie rung, make chicken parmesan.
    Make muffins with the almond flour too, or a heavier dose of the ground flax seed to make muffins/breads with.

    Same thing goes with the other rungs, as you add in foods with higher glycemic loads, the portion sizes can be VERY small. So, you want to mix them with other things to 'spread' them out. Beans/fruits are the same way....use a small amount of beans on your salad, use fruit on your salad.

      Portion control has always been my downfall. That is why I am affraid to have some of this stuff in my house!! I guess I will just have to GO FOR IT and see what happends. Thanks for you reply.

      Any comments about the use of Carb countdown milk??

        Buy the 1 or 2 ounce packages of nuts at first until you realize which ones cause you problems. Peanuts are a biggie for me. I'd eat a whole jar if it was available. I can control portion alot better with pecans and almonds though. I bought like a 5lb bag of almonds at Sams and put them in the freezer. I get out what I need at the time. Look in the baking section of your grocery, they should have small packages of all kinds of different nuts. But, really, try grinding the almonds...that really does help with portion control and gives you a bit of extra texture as a breading.

        I haven't ever used the Carb Countdown milk.

          I think I will buy the small package of slivered almonds found in the baking section. I will put them on my salads...ONLY!
          I used to buy one pound blocks of cheese but I would eat WAY too much. So I switched to eggbeaters that already has the cheese in it (Cheese and Chive). This way I can;t eat the cheese by itself. So far it is working fine.

            don't do both the fresh dairy and the nuts at the same time cause you will not know what gave you trouble. if you want the Carb count down stuff rung 2 is the place to try it. you can make yogurt from it too and them yogurt cheese or you can do like some of use have been doing in the make your own cheese topic and buy a small carton of milk and make some ricotto style cheese it is very easy to do and you don't need any strange oe expensive stuff. to do it then you can see if you can handle that in say a single serving italian lvegie lasagna dish.

            I buy raw nuts like almonds and freeze them then I just measure out the amount I need for my serving and treat them. You can roast just that serving or flavor just that serving and then you know how many you got to eat. frozen raw doesn't taste anything like Planters nuts as some folk raiding my stash discovered recently so the urge to down the whole bag isn't there.

              I am trying the Carb countdown this week. I will see how that goes and then move on to nuts and seeds in a week or two. I have use 4-8 oz for the last two days and so far everything seems fine.
              That's a great idea about freezing them to prevent spontanius eating. Maybe I should freeze EVERYTHING!

                Add everything in 5 net carb amounts, so you'll know what your carbs are doing.

                The dairy and nut/seed rungs are where you will need start balancing your meals because these products are high fat. So if you choose to eat 5 net carbs worth of dairy, be sure to subtract 1/2 or 1 serving of added fat in the form of butter/oils/dressings/mayo and/or the hard cheeses.
