Hi Everyone! Last night I made spaghetti squash for the first time ever. I cut in half, lengthwise, sprayed the dish with Pam and cooked it at 350 for 50 minutes. I let it cool and used the tines of a fork to make it spaghetti-like. It looked really good - until I tasted it. Is it supposed to be crunchy, or did I just not cook it long enough? ICK! I expected the same texture as pasta! I think it would be really good if it was softer - I added butter and parmesan and some garlic salt and pepper, so it wasn't the lack of seasoning that made it yucky!

I LOVE spaghetti squash and I find myself having the same problem as you. I usually make mine in the microwave and stick it in for 10 minutes, it comes out kind of soft and crunchy. I like the crunchiness a little (I know I'm weird). You could try increasing the heat a bit and maybe just playing around with it like that to see what you come out with. The other great way to try S.S. it so add some No Sugar Added Spaghetti Sauce which Hunt's makes and some Parmesan cheese it's really good.

I've never made spaghetti squash, but I found this:

The description suggests 375 degrees for an hour...maybe you could try baking it a little bit longer (or increase the temperature a little)?
The above site has some recipes too. I don't know if they are all Atkins friendly, but the alfredo one sounds good!!

Try nuking it. After cutting it put in facedown in a microwave dish with a tablespoon of water. Nuke for 12 minutes and yummy its done.

My dh makes it for me. He slices it in half and puts it face down with some water. The water turns into steam and that makes the consistency a great deal softer. Much more like pasta noodles. I don't like the crunchy myself, but I can see how you might if you prefer al dente noodles.149.8/no weigh/ 119

I also cook mine, then slice it and put it in a microwave bowl with water. It turns out very soft and delicious. I put butter and parmesan cheese on it. I love spaghetti squash!Starting Date 3/12/04 285/165/145 - F
