  • What Did You Learn on the Nuts Rung?

    I just started on the Nuts Rung this week and so far not much is different. Of course, all I've had was a small amount of peanuts, but they didn't create any cravings or hunger...or where I couldn't stop eating them.

    Everything is fine so far.

    As soon as I get some almond flour, I will try a recipe using that and see how it goes.

    What did you learn on this rung?

    Nuts are a really good energy boost. I usually top my yogurt with them. I tried cashews and they are really good, but higher in carbs. Other than that the nuts rung is a good one.

      Have you experimented with any of the nut flours? I think it is really cool that you can make a flour out of nuts and into something much more healither. I can't wait to try it!!

        I learned that I have to keep them out of my house and only use them when I am out and about and need something small to tide me over. Then I have to get a small bag so I dont mindless eat them.

        I have no control over portion size if they are in my house.

        I also learned that I love macadamias.

          I learned "fixed" nuts be they homemand or store bought are a very very tempting item but raw nuts stored in the freezer don't have any tempting powers.

          I learned that almonds and walnuts were good for lowering cholesterol.

          I learned I could make nut "flour" in my cofee grinder and food processer much cheaper then store bought but it is courser and will need presifting to follow recipes with.

              Love them in salads! I saw very quickly that I could go overboard with them, but so far I am keeping them in control.

                Luckily I don't have problems with nuts, I love eating them sometimes, especially sunflowerseeds and hazelnuts, but I have them in the house and even don't eat them every day.
                I never experimented with nutflour, I do throw them in my muffins to give those that extra little crunch though, hmmmmm.

                  I learned the exact same things as 2big. PLUS that I really should stay away from salted peanuts.

                    how are you guys eating yoghurt and muffins when you're on the nut level? I'm confused. And, i admit, a bit jealous.

                    UPDATE: My bad. I realize that the 2nd rung is Dairy. I guess I just didn't think that through. Though, still, the nut rung is before the whole grain rung, so maybe muffins aren't in the cards, yet.

                      The muffins are made using a nut flour instead of regular flour or grain flours.

                      Take your 5 net grams of nuts (usually hazelnut or almond) and grind them in a coffee grinder to make a nut flour. These generally make a much, much better flour than the white stuff anyway!!!!! I also use it to make breading for fried chicken.

                        If snacking on nuts I have real problems with control but a few nuts on salad is fine, on yougurt...not a good but still better than alone. I have to buy single serving containers or I eat them all........and I will have to try the freezeing them thing...smkehouse almonds are my fav and sooo addictive to me.

                        So I would say that I learned that I can not rely on nuts to be a legal snack for me but I can use them in recipes or as a crunch topping

                          I finally got a bag of almond flour today and all I can say is...YUM!

                          I used it sparingly on a chicken breast I cut up in nuggets, added salt, pepper, garlic and minced onion and WOW! It turned better than I was expecting. Even my DH loved it and gave it a 10!!

                          Woo Hoo! Another exciting meal option!!

                          I think since this experiment turned out so well that I will buy another coffee grinder and the nuts whole so it won't be so expensive in the future.

                            I'm on the dairy rung right now and have decided to skip the nut rung. This is my second time around and remember from my first time on atkins that I had problems with nuts, they would stall me and if I had a bag in the house I tended to over snack on them.

                              I learned that I am absolutely powerless over macadamia nuts. I avoid them like I do chocolate.

                              I also learned that I will not live without sunflower seeds. LOL
