  • Moving up to OWL...!

    Hi all - I'm starting week 7 now - and I'm moving up to the Veggie rung. Starting to turn colder here, so soups have been calling my name. I'm hoping to find some good Veg Soup recipes - and supplement my days with that. Extra cooked veggies as well. (though I feel full already - so it'll be interesting!)

    I have found it hard to get 30% protein (I hover between 26 - 28%). I guess I'll try some lower fat protein to get there.

    I've been reading all the great posts - and I appreciate all the help that this will provide as I feel my way along this WOE path.

    I'm SO glad (and nervous) to be joining you!

    If you click the link in my siggy, it will go to my webpage. There's a recipe section there and I have a recipe for mock split pea soup and I think another type of soup.

    Creamy soups are super-duper easy: saute a combo of celery and onion, along with the flavor veggie (like broccoli, asparagus, mushroom, etc.) until they are softened. Then add enough broth to cover the veggies and simmer until really soft. Then toss into a blender, and puree. You might need to add more stock or water to thin out this soup. Salt and pepper to taste. Add a little heavy cream or sour cream to your individual serving. You can freeze extras so you will have a supply on hand for busy nights/days. You can use the same technique to make vegetable sauces, which are another great way to incorporate those extra veggie carbs.

    Also, there's a recipe I adapted from Jacques Pepin in the Main Courses section of the Recipes forum. It's called Instant Vegetable Soup My Way---perhaps the easiest soup recipe on the forums.
