  • Moving on up.

    I think Im ready to move up a rung. Im having issues with berries. (I'll eat the entire container of them.) and Im afraid to try melon because I *know* I'll eat the whole danged thing. (and its too expensive to buy those lil portions precut at the store). Ive hit the alcohol once (on my Bday) for one light beer. I dont drink much/often and usually have less then 5 drinks in an entire year. So, Im kinda skipping the alcohol rung because really, I dont drink enough to hang out on it.

    So eventhough Ive got some serious weight to still drop, Im hitting legumes. It feels wrong to me to be there when I still have a bunch to get rid of but I cant hang on the berries forever because Im going to sabatoge myself if I keepbuying the damned things. I know I dont have to buy them but I love them. a lot. weakness is thy middlename. So, Im considering the big move.

    I checked out the OWl sticky (I loaned out my DANDR to a friend) and I think Im ready. 5 carbs of pintos sure cant be a whole lot. (Ill fitday it) But god I want some white chili and I think the 5 carbs of goodies would make me smile. And then theres hummus. and tofu (shrimp toast ala Meg).

    Why is each rung so blessed scarey!!!

    I buy fresh fruit, like berries, and I freeze them. Freezing them will prolong their shelf-life and provides me with yummy fruit when I can't find any in season. You can freeze melons too---cut them up and freeze.

    Legumes are generally very small amounts. So when I use them, I use them as garnishes or toppings.

    BTW, tofu is allowed even during Induction Phase.

      Hi Megs! I freeze raspberries for yogurt a lot of the time. but if Ive got um in the fridge... they disappear down my gaping maw. Im exited to puree pinto beans in my chili to make it that thick texture I miss. (Ive made it beanless and have to make it very hot/spicy to be satisfied with it) and black beans on taco salad sounds great.

        If that's the case, then remove the portion you will eat and freeze the remainder as soon as you get home from the store. Or if berries are too great a temptation, don't buy them. And if you do eat them, only eat them in a "controlled" environment like restaurant or a friends home.

          be careful with pintos as they are one of the higher glycemic beans. If you can get hold of a copy of Dr Atkins ATKINS FOR LIFE book he ranked each OWL food rung by the lower glycemics as eat often and the higher more problematic ones as eat sparingly. That was the list Elleth used in her stickie of rung foods if you have looked at it, pintos are a eat moderately 2-3 times a week. the least problematic from a blood sugar propective are chickpeas,kidney beans ( watch for sugar added in the canned ones) lentils soy beans split peas, soy beans and soy milk. the moderation ones ore blackeye peas and beans. somewhere are red beans, cranberry beans, black beans, navy beans, etc., but they didn't make the Atkins AGR which is atkins glycemic ranking which takes the GI and the seving size into consideration.

            Thanks 2Big. Is there only one version of the "Atkins for life"? I will hit the bookstore today to see if I can find a copy of it!

            (My DANDR is being passed around and Ive got a waiting list for it! LOL)

              TOC,

              The way I added beans was to put a tablespoon of chick peas or kidney beans on my salads. I love having the extra texture, and somehow it makes the salad "stick" to my stomach better. I've also added them into soup/chili.

              Also on legumes rung I added Mission brand Low carb tortillas. They are made from soy flour.

                yep only one AFL but you can now get it in paper back

                Dr Atkins says since their are a lot of carbs in a small serving to spread them around like Joy just mentioned. I love smashing them up and making a garlic white kidneybean olive oil paste I can spread like peanutbutter on stuff. you can make homemade hummus too.

                  Mmmm that sounds good. Bet it would be good spread on some cucumber, squash, or red peppers. Yummy.

                    omg a tortilla. after 9 months without a tortilla.
                    I see a burrito in my future. Id have never thought that there would be a tortilla coming this soon in the journey.

                      I smash them up too and use them like a hummus type thing. I've done alot of label reading and found that Goya Brand Pink Kidney Beans has the lowest of the canned beans. They're pretty bland, so it's easy to make them hummus flavored by adding a few drops of toasted sesame oil, a dash of vinegar and alittle garlic powder.

                        TOC,

                        I make enchiladas pretty regularly around here with the tortillas.

                        I put beef or pork or chicken in the crock pot with cumin and red pepper and other spices and let it cook all day. When you get home, mix the meat with some cream cheese, wrap up in the tortillas and then put in a pie dish. Cover with one small can green enchilada sauce and sour cream mixed together. Top with monterey jack cheese and bake until the sauce is hot and cheese is melted. MMMMMMMMMM MMMMMMMMMMM MMMMMMMMMMM (you can brown ground beef for the meat too)

                        Chimichangas--same thing with the meat. Bake them in the oven. Serve with guacamole, home made salsa and sour cream.

                        I've made apple turnovers...chayote squash as the apple, the tortilla for the pastry.

                        All sorts of fun things with tortillas. The only thing I don't really do with them is use them to make wraps. LOL I love the lettuce as a wrap much better than the tortilla.

                            Joy, I went looking last night. I REMEMBER those tortillas from before atkins. I found Carb Balance or soemthing to that effect made by Mission. they were made with wheat and soy not soy alone. were 18 carbs and 11 fiber. I looked at every brand made in the store and not a ONE was made with soy only.

                            What store are you finding the LowCarb ones at?
