  • what to pack for lunch

    Lunch today - (question - what can I send for lunches for people who are going to work/school?)
    This is from another thread. Lets discuss lunch ideas to take to school and work that pack well.

    I will go first.
    My family loves a slice of meat ,top with a slice of cheese, a thin line of mustard and roll around a pickle

    Leftover dinner

    hard boiled eggs and cheese/pepperoni

    cut veggies with dip

      First off, get proper storage containers: an insulated lunch bag or a small cooler. If you like stews/soups or warm food for meals, get a thermos-style container built specifically for stews/soups. They are usually shorter and have a wide-mouth.

      Leftovers are great. So let your imagination run wild there. My lunches and most of my weekday breakfasts are based on leftovers. I just cook extra and eat it the next day.

      On the lower rungs, you can use the Atkins Revolution Rolls recipe for sandwich bread. The recipe is in the 14 Day Induction Forum in the sticky thread called "Induction Recipe Basics". On the higher rungs, you can use whatever grain product your body can tolerate.

      For green salads transport your dressing in a separate container to prevent the greens from becoming soggy. I've come to like salads made from cooked veggies like green beans + asparagus, grilled eggplant + zucchini, etc. For those types of salads, you can mix the dressing with the veggies, in order for them to marinate (and eliminating the need to bring another container).

      Stews/soups: if you have access to a microwave, just bring your meal in a tightly sealed microwaveable container and heat at meal time. If you don't then use a thermos container. Heat your food before putting it into the container, seal and carry along.

        ok this lunch is in your face good

        The evening before steam an artichoke (well steam a bunch and have themfor dinner) when the artichoke is done drizzle with olive oil and chill wrapped in plastic in the fig over night...
        while the artichoke is cooking make this sauce to accompany it ...

        Aioli

        3 cloves of raw garlic peeled
        1 jumbo fresh egg
        3/4 cups extra virgin olive oil
        3 tbl fresh squeezed lemon juice
        Kosher salt and fresh cracked pepper to taste

        ok in a food processor you start with the garlic add the egg ...mix well and while the motor is running add half the olive oil slowly then add the lemon juice then drizzle the rest of the olive oil in slowly when it emulsifies and is like mayo add your salt and fresh cracked pepper to taste and if you like ...and I like for sure ...you can add a tsp of New Mexican chile ..store in airtight container and keep chilled .....

        in your lunch make sure you have a nice container for your artichoke and an equally nice one for your aioli ...a tall drink of sparklling water of your choice ...


        take each leaf slowly off this beautiful vegetable ...and dip into the aioli..then slowly pull the flesh off with your tongue and teeth ...omg you will never buy mayo again..why should you???....you get both the fragrance and flavor of this wonderful green thistle and the oily garlicy sauce you made for yourself ...omg we are so worth this lunch I think ....

          Oh and ps on the recipe ..it is a proven fact that fresh raw garlic covers ketosis breath so ....if you had any worries about eating raw garlic at work ...don't it is better than ketosis breath any day

            Roll ups make great lunches. Some of my favorites are:
            Turkey with Smoked Cheddar, Mayo and crumbled bacon and lettuce.
            Turkey with Swiss, an avocado slice and alfalfa sprouts. (doesn't work to well in a lunch though)
            Turkey, cheddar, lettuce and red pepper slices

            Smoked turkey and
            Muenster, Dijon, a slice of tomato and the piece de resistance caramelied onions
            or Goat cheese, Mayo and a slice of dill pickle
            or Swiss cheese, Garlic Mayo and lettuce.

            Of course you can always use the old staple Roast beef, horseradish mayo, bleu cheese and a slice of red onion. Provolone also works with prepared horseradish

            With Chicken I've tried Mayo, Red Peppers and Provolone, but just about anything goes with Chicken

            Ham is good with Swiss and Dijon and a dill pickle
            or try this, Ham, cream cheese and a pickle

            Want one more? lox with cream chees and a green onion.

              These are some great ideas! Gonna try them on the family this week. A question - if you are trying for 20 - 25 grams of carbs a day, and say appx. a third of that should be at lunch. How are you managing 7 NET carb grams? I'm definitely gonna try the stew, and marinated veggies - that helps alot! And gosh the artichoke sounds WONDERFUL! (I'm jealous you can get good ones. It is impossible here ) -

              Denmark mainly only sells veggies that are fresh and local - so you can only get a few frozen ones or imported ones (and those are boring like onions, mushrooms, etc.). I believe that eating the fresh, in season foods are the best - but oooohhhhhh I long for some variety!

                Vegetable sauces/soups.

                5 net carbs of tomato sauce is about 1/3 cup of the sauce. If you mix that 1/3 tomato sauce with 1/2 cooked ground meat, add spices like chili or taco seasoning that serving of chili flavored meat counts as 5 net carbs of the OWL veggie.

                Relishes/gravies

                I posted this in the Cooking Lessons forum about making gravies, using veggies:

                Also if you love onions, you can make an onion "relish". Basically, it's just sliced onions, slowly cooked in oil until they are golden brown. Flavor with salt, pepper, herbs, and a dash of vinegar or lemon juice to offset the sweetness and you can use that as a topping for meat or salads. 1 cup of sliced onion is about 10 net carbs. That amount cooked down is about 1/4-1/2 cup. So half of that amount is 5 net carbs.

                  antipasto is nice ..I take a bunch of containers and fill them with all kinds of things like olives, marinated veggies, cheeses, sliced meats, fruits... whatever I have on hand then just keep it in the frdg at work and make a spread at lunch and just pick and choose what I want to eat....I usually make enough for 3 days ...well that is if the guys I work with don't feel the need to have tastes and wipe me out!!!

                  that would be my lunch for today and tomorrow I have the containers full and ready to go ...

                    Ok one more ..

                    make a low carb shrimp cocktail ... just make a fresh tomato salsa and add a bag of frozen cooked shrimp ...that is it
