Hi all - I'm back. Been sort of 'missing in action for 2 weeks.... But I read all your kind comments to my last post and stuck with it! And you were right! WHOOSH... 7.7 pounds have disappeared in the last 2 weeks!! YES!
I'm almost to my first mini-goal....
The last two weeks I've had a colleague from the US arrive, we then drove to Stockholm for some work where we stayed for 4 days. We drove back home and I was sick for 3 more days... while having guests. But somehow - I managed to 'convert' her to my way of eating, show her how Atkins isn't just eggs and meat... and she has lost 3 pounds (out of 20 she has to lose).
I also had a family party to attend with all the traditional Danish food. I brought my own. No one was offended and most were curious... I'm learning to pack LOTS of food with me - everywhere I go. I'm also learning - I'm worth it! (I used to pack the babies things, get everyone ready, then get myself ready in the car. Now I'm making my food first, then everyone else's things. And - surprise - it isn't as big a crisis as I expected it would be...)
All this is probably old hat to you guys... But I do spend at least 1 1/2 hours in the kitchen a day. I make sure I've got the foods I need to eat, and that I don't go hungry. And yes - others in the house following this way of eating is making it easier but basically I'm the only one cooking. I'm learning to NEVER let myself get hungry. And the result is that I crave very, very little. Someone was describing a german chocolate torte - and it didn't even sound wonderful or mouth watering. Strange! I don't sit and think in anticipation of what 'sounds good' for dinner. Funny enough - I don't really care what it is. I DO try to make nice, attractive, and thought out food so that we don't get bored, but whether it is beef, or chicken, or lasagne, or fettucine alfredo, or ... (all low carb of course), I don't really care.
WOW - I've never in my life even imagined a place where I didn't spend a part of the day thinking 'what sounds yummy' for dinner tonight or how about some of that XX that I've been missing...
I know that all of you have reached this point already - so this is boring. But on a day to day basis... I'm still amazed!
I've also decided to sign up for a racewalking course - and walk the Copenhagen Marathon next May. (it has to be complete in under 6 hours so I have quite a bit of training to do) This is my treat to myself - the course that is...
Over the last two weeks, I've been on the dairy rung and added nuts. Funny enough - even though I couldn't WAIT to add those things... I've only added them a total of 4 times over 2 weeks. I just can't be so bothered... Weird. I'm kind of like, "Oh yeah - need to have some yogurt or cottage cheese...." Later in the day, "Oh yeah - I forgot to eat that..."
I HAVE added L-Carnitine to my daily supplements. Has that helped with the weight loss? I don't know - but I'm going to keep taking it! (Dr. Atkins recommended it...) I've also been sick, haven't always eaten all I should, and been travelling where I didn't cheat - but didn't get all my carbs for sure... And I've slacked off in the exercise department a lot. Gotta get back with it now that I'm a bit better and at home... Anyway - I'm just going to keep on trucking... And hope for my mini-goal by next Monday!
My goal for October is to lose 3 kilos (6.6 pounds), get my mile walking under 15 minutes/mile in preparation for the race walking class, and remember to add my nuts and dairy! (forgetting to eat a 'treat'- what a concept!)

Good job, Kacey, you are doing great! Atkins meals are so satisfying, that whenever I would fall off the wagon, I would miss those meals. There is a feeling that I would eat those meals and feel so satisfied mentally and physically, that never happens when I eat high carb meals.
