  • Moving on from lettuce

    Here's my question. Do I forever need to keep eating 2 or 3 cups of salad sometime during the day, or once I start moving up the rungs, can I substitute those lettuce carbs for something else. I'm in the dairy rung, and I'm really tired of having salad and something for lunch. So I just wanted clarification here! Thanks!

    The salad list has alot more than lettuce on it. It has mushrooms, celery, cucumbers, radishes, peppers, etc. So you don't have to eat lettuce if you don't want to. In fact, I hardly eat lettuce because it's a nutritional waste of my time (very little fiber, very little vitamins and minerals)

    But those 3 cups of Induction vegetables become your minimum daily vegetable intake for the rest of your Atkins. When you start OWL, you add an additional 5 net carbs of those vegetables to your current menu.

      Oh, grr. So lettucy things it is. I'm not too big a fan of the induction veggies list, so I had stuck with lettuce (different types that are on there). I'm just bored with eating salads. I like all my other veggies better! Like broocoli, cauliflower, and pumpkin!

        OOH...Chasin'...enjoy those veggies you do like and keep the different varieties of salad. You'll be thankful you did with the roughage

        I started changing up things a bit with cabbage. Yep, good old cabbage and it's 101 ways of cooking it. Shredd it up and add it like "stirfry", or add to chicken stock & meat for Chicken and "noodles".

            You're welcome!
            Cabbage is a Low Caber's best friend
            Oh, and zucchini. If you're a fan of squash, you can even grate that up and fry it up with some real butter, dash of salt/pepper/garlic powder.

                Good for you for deciding to re-look at teh allowed veggies
                Remember that the 'salad list' do not have to be eaten raw nor do the 'other list' need to be eaten cooked!
                My DH HATED mushrooms when I met him, but had only eaten them cooked (Army cooking can be unimaginative) but when I made meals with sliced raw mushrooms he found they are almost his favourite veg! given the opportunity he would eat pounds of them raw as snacks now!

                Another way of using them is to saute them in a little butter or oil and use them in sauces - a cup of mushrooms or peppers cook down into a smallish amount that can easily be used as a topping over meats if you are having a hard time getting the 3 cups in as well as your extra 5 net carbs of other veggies.

                  Elizellen is correct. All of the veggies on the "salad" list can be cooked---including lettuce. The French have a soup called 'soupe de laitue' (http://www.soupsong.com/rlettuc1.html) It's Atkins friendly.

                  But get out your book and review the Induction veggie list. There are total of 54 veggies listed. So give them a try.

                    I love salad - it's been a big fave for years but sometimes I get a little bored too. I find raw spinach leaves really nice to bulk up a salad (and is v low carb and easy to grow if that's your kind of thing). Also rocket, lambs leaf and watercress are a great change from lettuce.
