    I've been searching the net for pumpkin recipes.
    Linda doesn't have any either that I could find.
    any ideas as to what to do with Pumpkin.
    I'm not getting enough carbs so I need to add some squash type vegetables. or even in the form of a dessert.

    My favorite way to eat pumpkin is to mix one cup with 1oz. of cream cheese. Heat on a stovetop or in the microwave, add cinnamon, and a bit of sweetener (I use splenda). It's like a warm pudding...very satisfying!

    Spaghetti squash is another great veggie that often is overlooked. Cook it and top with butter, pepper, and parmesan cheese. It's SOOOOOOOOOOO good!

        I'm not a big fan of pumpkin. I tried a couple of recipes but wasn't crazy about them. I thought it much easier to get some additional carbs using tomato sauce or low-carb pizza sauce instead. Throw some mozzarella on top and it tastes terrific on chicken or meatballs or omelets...wait, I haven't tried that one yet.

          I'm trying to figure out how you would do that but I guess just make an omlet with some veggies in there and pour some tomato sauce and mozz cheese.

            1 serving pumpkin, 1 egg, cream cheese, splenda... nuke cream cheese to soften, add the rest and mix well... stick back in the microwave until solid... it'll make like a pumpkin cheesecake thing that's really yummy.

              I like pumpkin with just a pack of splenda, and some cinnamon. It's an easy lunch to take to work, heat up in the microwave.
              If you don't mind a carbier squash, try acorn squash. Put it in the microwave for 15 minutes, cut in half and scrape out the seeds, then throw some real butter inside. Heavenly.

                Pumkin pie just follow the regular recipe sub the evap milk with cream and the sugar with splenda. No crust in induction or a nut one in OWL

                  Julirama - I'm going to have to try that recipe - I'm craving pumpkin now that I've read it!


                  She's right about the spaghetti squash. hubbie and I will cook up the squash, mix with the butter/garlic and add shrimp. Mmmmmmm! I'll have to try it with the parmesan cheese, tho... you've got me thinking!

                    I don't like sweets very much. So I use pumpkin as a vegetable side dish---similar to mashed sweet potatoes. What I do is microwave a portion of pumpkin puree, add butter, salt and pepper and I have it as a side with roast turkey, roast chicken, roast pork or pork chops.

                    During the fall, when I buy whole pumpkins, I slice them and remove the rind and seeds. Then I cut the flesh into french-fry sized pieces and I fry them---just like frnech fries--salt & pepper: they're great dipped in a little mayo and go well with bunless burgers. I also cube them and cook them like hash browns or homefries.

                    And of course, I use pumpkin puree in soup. Soup is a great way to eat those 5 net carbs because it's filling, it's portable, and it doesn't have a lot of volume.

                      Acorn squash is a starchy vegetable, Rung 8, and only suitable at the appropriate time in OWL. It is not induction-legal.

                        I use pumpkin either as a treat with splenda or I make pumkin pancakes. YUM!

                            Here are a few:

                            Pumpkin omelette

                            2 eggs
                            1/4 cup canned or fresh cooked pureed pumpkin
                            1/2 tsp vanilla extract
                            1/4 tsp maple extract
                            1/2 tsp fresh ground cinnamon
                            pinch of ground ginger
                            1 tbl (give or take) DaVinci Caramel syrup
                            1 oz cream cheese cut into tiny cubes

                            beat the eggs, pumpkin, vanilla, cinnamon, caramel syrup well together pour into a preheated over med high skillet with a pat of butter in it cook until almost done and ready to flip ... add the cubes of cream cheese and fold it over with a very easy hand....cover and remove let stand until the inside is completely firm....

                            my entire family loves this

                            I serve it with a dollop of whipped cream and a sprinkle of fresh grated cinnamon







                            Sicilian Pumpkin Soup

                            1 link Italian sausage (or you can use 3-4 oz. of bulk pork sausage)
                            10 slices Pepperoni, quartered (use more if you wish)
                            1 cup pumpkin (I used canned pumpkin)
                            2 cups chicken broth
                            2 Tbls. chopped onion
                            1/2 tsp. Oregano
                            Black Pepper to taste optional

                            Remove the skin from the Italian sausage. Crumble into small soup pot and cook until browned well, drain off grease. Add everything else except pumpkin. Let simmer for about 10 minutes. Add Pumpkin. Simmer until hot. Serve.



                            WHOLE RECIPE CALS: 694, FAT: 53, CARBS: 23, FIBER: 12, NET CARBS: 11, PROTEIN: 31



                            I browned the sausage and pepperoni first, remove it from the pan, then the onions and garlic, sauteed the onions in olive oil with garlic powder . I also simmered it for about 30 minutes after adding the pumpkin instead of 10 to make sure everything melded together and the pepperoni got cooked. It sounds strange, but it's really good. Enjoy!








                            Pumpkin Pie Mock Danish

                            2 oz cream cheese
                            1 tbsp Splenda
                            1 tbsp pumpkin
                            a touch of
                            pumpkin spice
                            1/2 tsp vanilla
                            1 egg

                            Soften the cheese for 20 seconds. Stir, and add the egg. Stir until the yolk is blended. Add the remaining ingredients, make sure you just sprinkle a little bit of
                            pumpkin spice. Nuke for 2 minutes 10 seconds. I like to stir it. The pumpkin I use by Libby says a WHOLE can is only 9 gram, so I know that a tbsp can't be much at all. I would say it may be around 6 grams total. You may want to add butter to enhance the flavor even more, but I don't.






                            pumpkin muffins

                            1 cup canned
                            pumpkin
                            1 cup splenda
                            5 each lg eggs
                            2 cups almond flour
                            1/4 Cup flax meal


                            1 teaspoon baking powder
                            1 teaspoon vanilla extract
                            1 teaspoon
                            pumpkin pie spice
                            How To Prepare: Preheat oven to 350. I used the silicone bakeware so you don't have to spray the pans. If you have the regular ones you need to spray with pam.


                            Beat
                            pumpkin, baking powder, vanilla, pumpkin spice and splenda until blended. Beat in eggs, one at a time then almond flour and flax meal. Pour into pan and bake 45 minutes or until done in the middle ( test with toothpick).


                            Frosting

                            8 oz cream cheese
                            1/2 teaspoon vanilla extract
                            French Vanilla Davinci's to taste
                            Splenda to taste.

                            Frost when cool.

                            Per Serving (excluding unknown items): 210 Calories; 14g Fat (57.3% calories from fat); 14g Protein; 9g Carbohydrate; trace Dietary Fiber; 108mg Cholesterol; 132mg Sodium. Exchanges: 1/2 Grain(Starch); 2 Lean Meat; 1 1/2 Fat; 0 Other Carbohydrates

                              Such Great Ideas.
                              My goodness there's alot of great ways to eat on this diet isn't there. I never realized.
                              I guess we just get stuck in the old way of eating and accept it blindly.
                              I walked thru the Grocery Store and see everything is bread coated, sugar added. It's crazy and that just can't be a good way to eat especially not healthy much less gain weight. I did find in Walmart amazingly nitrate free sliced turkey breasts and hot dogs. I was shocked.
