    I'm full of questions today! I have basically skipped the dairy rung, unintentionally, but I simply haven't been able to find low carb milk, really the only thing I've missed from dairy since we already get cheese and heavy cream. So, the question is, if I'm able to find the milk one day, is it a problem to go ahead and add it since I'm technically past that rung now? Thanks!

    The "Dairy Rung" is sort of a misnomer: In the book it's called "Fresh Cheeses" and in the book, examples of fresh cheeses and other dairy products are given. Fresh cheese is cheese that hasn't been aged. Things like cottage cheese, ricotta cheese. Fermented milk products like yogurt, kefir, and buttermilk are put in the dairy rung as well. These products aren't allowed in Induction Phase due to the lactose, the natural sugars, in them.

    And yes, regular milk is fair game on this rung too. Most people opt to avoid regular milk because they have the habit of drinking a whole 12 ounce glass of milk. But if you aren't one of these people or if you use the milk as an ingredient, 4 oz (1/2 cup) milk has about 6 carbs. And for things like cheese sauces, cream soups, coffee, tea, ice cream, where the milk is used in smaller amounts (tablespoons to 1/2 cup per serving) it's a more non-processed and non-artificial option imo.

    But if you go back, you'll have to follow the OWL rules of adding these products.

      If you decide to have a drink of regular milk make sure you use your measuring cup...half a cup is a very small amount to drink...my glass still looks almost empty.

        Yeah, I think I'll have to wait until I can find some low carb milk. 1/2 a cup just doesn't really seem worth it! (I am definately someone who might drink that 1/2 a cup and try to justify why I should get more!)

        I have a question about this:
        But if you go back, you'll have to follow the OWL rules of adding these products.

        Do you mean as far as 5g carbs, only 3 days of the week and 2 weeks before adding something else?
