Mmmmmm Dairy! My absolute number one FAVORITE rung after veggies of course LOL Wanna know why? Greek Yogurt and George Stella's New York Style Ricotta cheesecake:
24 ounces cream cheese, softened
1 cup extra-fine whole milk ricotta cheese (to refine, process in a food processor for 1 minute)
1/2 cup sour cream
1 1/2 cups sugar substitute (recommended: Splenda)
1/3 cup heavy cream
1 tablespoon no sugar added vanilla extract
1 tablespoon fresh lemon juice
2 eggs
3 egg yolks
Special Equipment: 1 (8-inch) springform cake pan
Preheat oven to 400 degrees F.
Spray the springform pan with nonstick vegetable oil cooking spray. Set aside. In a shallow roasting pan big enough to fit the cake pan, pour about 1-inch of water and place it on the center rack of the oven to preheat.
In the bowl of an electric mixer, beat softened cream cheese, ricotta, sour cream and sugar substitute on low speed for about 1 minute until well blended.
In a separate bowl, using a wire whisk, mix heavy cream, vanilla, lemon juice, eggs, and egg yolks until blended.
Turn the mixer on medium speed, and slowly pour the egg mixture into the cream cheese mixture. Beat just until blended and then turn off; be careful not to over-whip.
Pour batter into the greased springform pan. Place pan into the heated water bath. Bake for 15 minutes, and then lower the oven temperature to 275 degrees F. Continue baking for 1 1/2 hours, or until top is light golden brown and cake is pulling away from the sides of the pan. Turn the oven off when finished cooking and leave the cake in the oven to cool for 3 more hours. (This will keep the cake nice and tall.) Then remove cake and refrigerate before serving. Serve chilled.

Greek yogurt is a type of yogurt. Generally it is unsweetened, lower in carbs than most other yogurt. You can get full fat, 2% and 1% I think...the full fat is the best. It's REALLY thick...kind of like Daisy brand sour cream. But it has that distinct yogurt flavor. I love it plain because its very much like sour cream. I use it in sauces and such. But, I also love it sweetened with Splenda and some berries. Delish!

*hijack* I love Greek Yoghurt too - I even found that I can dip chicken pieces in it with seasoning and then into the parmesan cheese and then fry them up for southern style fried chicken!

The cheesecake sounds delicious. I have been busy reading labels on yogurt at the supermarket. It is enough to make your head spin. I was laughing because when I first read about the yogurt, I misread it and thought it said Geek yogurt! Then I was wondering how many carbs there were in each byte! LOL
Actually I wonder where I can find it here in the Dallas area. I wonder if Whole Foods carries it. I am still having problems finding Land O' Lakes canned whipping cream that is made with Splenda. I was told that WalMart carried it, but the one by us does not carry it.
Thanks Joy. I found it. Central Market here in Dallas carries it and my wife (Diana) is going to be such a sweetie and head over and pick some up for me. She is also going to look to see if they carry the Land O' Lakes Whipping Cream with Splenda.
This morning I had my first dose of dairy. I had 1/2 cup of cottage cheese (4%) and put in it a couple of small strawberries. What a treat!
That was funny about the geek yogurt!! I'm totally going to find some - thanks for the tip!
I'm doing the same - just added cottage cheese this last week. We can't have strawberries yet though, can we? There are places all over here to pick them yourselves and I'd love to get some!
Not really supposed to have them until rung 4, but I use just a few to sweeten the cottage cheese and yogurt, otherwise I would probably just skip this rung all together.
