  • Lets talk about Legumes

    Sooooooo... I'm thinking of moving up to legumes, but the only thing thats mentioned there that i've ever tried is kidney beans, and i've only ever had them in a chilli con carne - i suck at chillis, i need to get my housemate (he's a chef) to make me one... unless someone has an easy recipe...?

    But, what else can i do with the legumes rung? i'm nervous to try! i didnt get up to this point last time round on atkins, i stupidly stayed on induction for several months, prolly why i gave up! thats why i try and push everyone in to moving up to owl now...

    Ive found at a few things on my journey up the rungs, - i love strawberries, i eat them every day, and i'm allergic to them, lmao, i cant stop eating them!

    Be british with me, most of those things on this rung i havent heard of, lol

    I love kidney beans and black beans! Rung 6 also means you can use soy products like soy flour, and soy milk. Soybeans I've heard mixed reviews of, but I've never tried them. You can also eat chickpeas (also called garbanzo beans or ceci beans) and hummus.

    A serving of beans is pretty small, so rather than eating them as a side dish, you might want to add them to salads, veggie mixes, soups, or sauces.

      Hi Emma, I'm with you, I've just started rung 6
      I'm trying soy milk this week a couple of times - adventurous aren't I lol
      I have had chickpeas prior to atkins - mashed into a paste - I think that's hummus, I like that! I think I'm going to be taking my time around now and just adding the tiny amounts to my regular food - nothing fancy yet lol
      hmmmm maybe a small homemade "Baked Beans in tomato sauce/paste"? I'll have to think about it in a few weeks lol good luck with your rung

        I don't even know where to get soy milk from lol, or soy powder, man i cant wait for my vacation to the states so i can buy lots of stuffs that they dont have in bloomin england!

        I asked my chef to make me a chilli last night, so he said he'll do that for me today, he's gonna put kidney beans and black eyed beans in it... i'm just gonna freeze lots of little portions of it...

        I'll have a search for soy flour when i go to the supermarket, is it near the normal flours? what am i supposed to do with it?

        ELIZELLEN!!!!!! where do you get yours? lol.

          you can make any legume into hummus. Just mash the cooked beans, add sesame paste (tahini), lemon juice, minced garlic (if you like it), salt and pepper to taste. If you can't find sesame paste, you can sorta wing the hummus by adding toasted sesame oil (usually found with the Asian products in most grocery stores) and mixing in some softened cream cheese (not traditional, but it works!) Your serving will be rather small...maybe a tablespoon or two, but hummus works as a spread/dip for vegetables, as a binder for things like tuna salad or chicken salad, or thin it out with olive oil and use it as a sauce for chicken, fish or vegetables.

              Sesame is fair game on the Nuts and Seeds Rung. Tahini makes a great salad dressing/dipping sauce too--add lemon juice, minced garlic, and thin it out with water until it's a creamy runny consistency. Alittle olive oil in it doesn't hurt either.

                Emma lol I'm in Australia and here the Soy milk is in the supermarket cold section - in with regular milk and also found in the same aisle as other long life milks, powdered milks & condensed milks etc: hehe I haven't seen soy flour though myself yet.

                  Hi Emma,

                  You can get soy flour and milk in Holland and Barratt. Also can get soy flour in Julian Graves - also are the best for nuts and nut flours if you're having those too. You can also get soy milk in quite a few supermarkets now, but check for sugar.

                  As for legumes generally I LOVE chickpeas - nice in salad, dip etc as people have said. Also good baked in the oven on a flat tray with some olive oil and chillli powder and salt to make tasty snacky things.

                  Canelloni beans are good (baked beans without sauce basically); borlotti beans are kind o meaty tasty - good in chilli, or salads.

                    Have fun with the beans rung, Emma. My fav's are black beans and humus...totaly yummy for adding protein to a salad or wrapping in lettuce leaves w/tomato, avacado, onions, peppers, etc.

                      Thanks for all yer inputs guys!

                      So what do you guys do with soy flour? I'll hafta go to holland and barrett at weekend - i think theres one local to me, but it might of closed down lol, i'm not used to health stores

                      Ive tried hummus and i didnt like it, prolly one of the grossest things ive ever tasted, i'm pretty fussy with food!
