  • 2 questions...

    Is it ok to get your 3 cups of veggies from 1 vegetable sometimes? For example, I love cauliflower with cheese sauce. It's not uncommon for me to eat 3 cups of boiled cauliflower with cheese sauce, and a chicken breast at lunch. Sometimes I'll eat a salad with dinner after that. As long as I'm not doing this everyday, is it ok once in a while?

    Second, why do we need to eat fat with fruit? I'm reading in other threads that when you eat fruit you need to eat fat...for ex an apple and peanutbutter, or raspberries and cream. Is this necessary? Or am I safe just eating fruit alone?

      Ok, the PC Atkins legal response is this: You are supposed to be eating 3 cups of veggies from the salad veggies list OR 2 cups of salad veggies and 1 cup from the other list.

      Do your best to stick to the book. However, as long as you stayed within the 20 carb limit, you should be okay.

      Eating fat with fruit will slow the affect it will have on your blood sugar.

        But, if you are on OWL, you should be eating more than 3 cups of veggies per day. It's always best to spread your veggies out across all your meals.

        Dr. Atkins said in the book to combine your carbs with a fat to help lessen the impact of the carbohydrates on your blood sugar. Since fruits are higher in those natural sugars, it really is best to eat them with a fat. PLUS, the fat makes you feel more "satisfied".
