Soy flour is made from soybeans, which are a legume. Legumes are Rung 6.
But, the good news is, if you're looking for flour substitutes, there are a couple that you can use on Rung 3. Almond flour is great, as is coconut flour. You can make your own coconut meal and almond meal by buying unsweetened coconut flakes, and whole almonds, respectively, and grinding them in a coffee grinder. Don't grind the almonds too long, or else you'll end up with almond BUTTER!

Almond flour ( almond meal ) is great for making atkins friendly cakes and cookies -- much better in my opinion than soy flour which seems to impart its own flavour to a recipe.Donna

I bought soy flour in bulk (to save money!!) when I started Atkineering (before I found ADBB and realised I was not following induction correctly) and discovered that I dont like the taste of it in baked goods.Wondering how to get 'most' of your net carbs from your induction veggies?

I actually bought it yesterday and made a pizza crust out of it by using George Stella's recipe (I added it to the main menu ideas thread). It doesn't seem to have the soyee bitter taste that I was expecting, but then again, added seasoning to it. I haven't tried it in baked goods such as muffins, pancakes, etc...I use my flaxmeal for now
