Re: I need some veggie inspiration!

Hmmm I've never tried 'em with may, but i guess that would be like a thick oil n vinegar, which is marinated chokes, so why not. Think I'm gonna try me some like that

I enjoy egglplant. I make an awesome eggplant parmesian with ricotta cheese. It's also very delicious roasted with olive oil and seasonings. I eat alot of celery in my stir fry with fresh ginger, water chestnuts and other stir fry veggies. I put radishes in my clam chowder. They taste similar to potatoes. Very yummy! Hope this helps

Re: I need some veggie inspiration!

Well you don't really cook a whole artichoke any other way (that I know of) but you can buy frozen artichoke hearts or marinated artchoke hearts (no tough outer leaves, no choke, just the heart, usually with an inch or so of inside tender leaves attached)

            and my usual veggies are:
            Brocolli

            Cauliflower
            Green Beans
            Red or Green Peppers
            Courgette
            Avocado
            Cucumber
            Mixed leaf salad

hmmmmm......i dont see spinach up there in that list. i dont see onions either!! and i was gonna say artichoke but chick already mentioned that. oh and, what about celery?

you know what i often do......i kinda stir fry vegetables and then add shrimp or sausage into the mix.....or add stir-fry veggies to chicken or something. i have been totally enjoying it too....and its not so burdensome to do all this.

You've given me and idea! Im gonna try your idea of a stir fry tonight, with left over roast chicken thrown in, and a bit of ginger!

Re: I need some veggie inspiration!

I detest celery on it's own, and especially raw, but it really adds something to soups, stews and stir fries - without tasting at all like itself if you know what I mean. I end up using quite a lot of it this way.

Kate- is that the orangy/yellow fleshed one?

If so it is not induction or OWL rung one friendly, but is one of the higher rung starchy veggies.
The turnip that is allowed on induction/rung 1 is the smaller white with a purpleish top half one.

Wondering how to get 'most' of your net carbs from your induction veggies?
