  • powders & alternative "flours"

    Where do the powders or "flours" fit it on the ladder? I saw an interesting recipe that called for almond flour (I'd assume that one is ok when you hit the nut rung?) and soy protein powder.

    Yes, you have that right. Almond flour can be eaten on Rung 3, and the soy can be eaten on Rung 6.

    And speaking of flours (thanks, Bette), I was going to head to the recipe section to ask this question, but I will do it here because it fits.

    What in the heck do you do with soy flour? I bought some a while back and have never used it. While cleaning out the pantry, I noticed that it will expire in April, so I'd like to use it before I toss it. So, how about it - what is your favorite thing to do with soy flour? I hear that it browns faster, right? And... umm... haven't I heard that there are actually brownies that you can make with soy flour? Oh dear... if that's true, I'll have to save that for my birthday and leave the leftovers at my mom's after I have a piece.

      Check out stellastyle.com for a couple of really good soy flour recipes. One is for a pizza crust, the other is for brownies. Apple (member on here) has posted the brownie recipe with some modifications in the desserts section. I've done her version of the recipe and they are FANTASTIC, almost DANGEROUS in how good they taste. They're more like cake-like brownies, because I think it would be impossible to get fudgy brownies without all the sugar...(unless Nicole knows somehow? She is Top Chef around here!)

      Soy flour *does* brown faster because it's already been "cooked" in a manner of speaking. However, I've used soy flour mixed with parmesan cheese (as well as salt and pepper) to make chicken breading and it tastes GREAT! You can't taste the soy flavor at all. Just make sure to cook it "slow and low" so the breading doesn't get too brown.

      When trying to figure out powders/flours, you've got to consider the source. If the flour is made from nuts or seeds, it's legal on Rung 3. If it's made from soy, it's legal on Rung 6, and if it's made from grains, it's legal on Rung 9. Other powders like protein powder have the same rule. If it's whey protein (made from milk) it's legal on Rung 2, and if it's soy protein, it's legal on Rung 6.

          I used coconut flour to make fried chicken. I'm sure you could use soy flour instead Here is the recipe.

          Niki's Coconut Fried Chicken


          INGREDIENTS

          3/4 to 1 lb Chicken Breast, Boneless, Skinless
          1 egg
          2 tbsp Coconut Flour (or Soy)
          2 tbsp Parmesan Cheese
          1 tsp McCormick Original Chicken Seasoning
          Oil
          Salt and Pepper (if desired)

          DIRECTIONS
          In one bowl beat egg. In another bowl mix, Coconut flour, Parmesan cheese, and McCormick Original Chicken Seasoning. Dip each piece of chicken into egg then coat with Coconut flour mixture. Put in heated frying pan with oil. Fry for 10-20 minutes (depends on how big chicken pieces are). When finished you can eat it plain, or dip it in hot wing sauce and serve with blue cheese dressing. The nutritional info is without the hot wing sauce and blue cheese dressing.

          I tried one piece dipped in Franks Hot Sauce with a little butter melted into it, and the other piece I ate plain. They were both DELICIOUS!!! Next time I may add a little more of the McCormick Original Chicken Seasoning.

          Makes 3 4oz servings.

          You could also coat fish the same way, with seasoning, and fry it. Like Julie said, it DOES burn easily so keep your burner on low. Coconut flour doesn't burn as easily.

            Hello Bettestress,

            I cooked in restaurants for many years and was a Pastry Chef as well. I have found healthy alternatives since doing Atkins for nearly four years. Baking alot and finding products to make the healthiest recipes possible I like to use products from this company. They also have recipes available on line that can be modified for the Atkins Lifestyle. I like their Sunflower Cracker Recipe, Yummm! They're Atkins friendly!
            This is the site www.bobsredmill.com I like their Soy Flour, Flax Meal, Almond Four, Coconut Flour, all Glutin Free. There's lot's of healthy grains and flours to choose from. I made my zuchinni bread recipe yesterday for my family made with the Flax meal and Soy flour. They loved it!

              Thank you, Nicole! I just found some coconut flour in the pantry, too. I often have good intentions, I'm just poor on follow through.

                  I looooooooooove Bob's Red Mill! Every kind of flour imaginable, great quality, and like Sherri said, most are gluten-free. Someday I'm going to splurge and buy some almond flour--there's a fantastic recipe for almond pound cake somewhere on the board...

                          Here's the recipe that sparked my question, it's from the Sweet Leaf (stevia) site and I haven't looked up the ingredients for when they can be added, if ever (like the unsweetened chocolate for instance) and I have no idea what the SweetLeaf folks are calling "Sweet and Slender", have to look that up as well, but I'm hoping some form of stevia.

                          The crust looks interesting (sorry they look adamant about no soy flour mitzie! lol). I'm always looking for something I can work with, even if I can't have it as the orginal recipe intends.

                          Aimee's Original French Silk Pie
                          8 servings

                          This pie is just incredible! I once served it to dinner guests, and after their first bite and all the ensuing "ooos and aaaahs," I informed them that it was sugar free. Their mouths gaped open and their eyes bugged out! They said, "Well, don’t tell the kids, they will never know the difference!" The husband still talks about how wonderful this dessert is.

                          Ingredients
                          - 3 ounces (squares) unsweetened baking chocolate
                          - 3/4 cup butter, room temperature
                          - 1 teaspoon SteviaPlus
                          - 8 packets Sweet & Slender
                          - 1 1/2 teaspoons vanilla
                          - 3 eggs

                          Break chocolate and place in a small saucepan over lowest possible heat. Stirring constantly, warm chocolate until almost completely melted. Remove from heat and continue to stir until thoroughly melted. Cool chocolate. Since the eggs won't be cooked, coddle eggs: Fill a small sauce pan about half-full. Bring water to boiling, then place eggs in boiling water for 20 seconds. Remove eggs from water and immerse in cold water to stop them from continuing to cook. Set aside. In a large mixing bowl with an electric mixer cream butter, SteviaPlus and Sweet & Slender on medium speed about 1 minute. Add chocolate and vanilla, mixing until combined. Continue mixing and beat in eggs one at a time for 5 minutes each. Total mixing time for egg mixture will be 15 minutes. Pour into pie crust (recipe below). Chill at least 4 hours to set.

                          Crust


                          Ingredients
                          - 1 cup ground almonds
                          - 1/2 cup soy protein (NOT soy flour!)
                          - 1 teaspoon SteviaPlus
                          - 4 packets Sweet & Slender
                          - 1/2 teaspoon cinnamon
                          - 6 tablespoons butter, room temperature

                          Combine well with a pastry blender or food processor and press into pie pan. Bake 5 minutes at 450 F. Cool completely before adding filling.

                          Topping


                          Ingredients
                          - 1 cup whipping cream
                          - 1/8 teaspoon SteviaPlus

                          Whip cream in a small mixing bowl with an electric mixer until peaks form. Add SteviaPlus and whip till combined. Spread on chilled pie. Sliver chocolate with a vegetable peeler. Garnish pie with chocolate curls. Enjoy!

                          Variation: French Silk Cups: Omit the crust and do the filling as instructed. Place finished filling into muffin tins and chill in the refrigerator as directed. Either top with the whipped cream topping as directed or serve plain.

                            OK, I'm drooling reading that. That sounds like the best darn dessert I've ever heard of.

                            I'm guessing by "soy protein" they mean soy protein powder??? I could be wrong.

                            Not sure what "Sweet & Slender" is though it sounds like a splenda equivalent.

                              Freda's Zuchinni Nut Bread

                              3 eggs
                              1 cup canola oil
                              2 cups granulated splenda
                              2 cups grated zuchinni
                              2 tsp vanilla
                              1 cup flax meal (sifted)
                              1 cup soy flour (sifted)
                              1 tsp. baking soda
                              1 tsp. baking powder
                              1 tsp. salt
                              3 tsp. cinnamon
                              1/2 cup chopped walnuts (optional)

                              1.) Beat eggs lightly mix with oil, sugar, and zuchinni.
                              2.) Sift together flax meal, soy flour, baking powder, baking soda and salt.
                              3.) Mix all ingrediants together well.
                              4.) Oil 1 bread pan and dust with soy flour
                              5.) Bake at 325 degrees for 50 to 60 minutes. Tooth pick test.

                              I don't know the carb count. This is my Grandmothers recipe that I modified to make Atkins friendly.
