  • Whoosh Fairy visit!

Second week of rung 1 OWL, down to 148 lb. Started rung 1 Feb 18 and held steady at 151. I think I am getting the hang of this. It is a lot of planning to get the carb count up 5 net carbs above induction level each day. That is just a lot of veggies! I still can't seem to eat 25 net carbs a day. I have managed to get it consistently up to 20 a day. Thanks to everybody on this board.

I have a hard time getting in all those carbs too. I start the first rung of the O.W.L. Tuesday.

It is quite a challenge! Four times trying to make Atkins work for me. I am planning to stay on rung 1 for at least 3 weeks, trying different veggies. This week I am adding bell pepper. This is the first time I have actually done it. Couldn't have done it without all the people on this board.

One fairly easy way of adding more veggies without feeling it is just too much food is to choose those that cook down appreciably like peppers, onions or spinach.

I often sauté sliced red/yellow peppers or onions in butter till soft and add as a garnish over meats, or add cream to make a tasty sauce. A few cups of spinach steamed till they are well wilted make only a few spoonfuls, and with added butter and cream again make a great sauce.

Or make soups from purééd cooked vegetables.
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!

Thank you for the tips. I tried the creamed spinach at Applebee's and like it pretty well. I have never liked cooked spinach but love it raw.
