  • Helpful Hints to Get Through Easter Dinner Cheat Free

    Please add any additional ideas or recipes. I went off this diet during Thanksgiving, Christmas, and New Years. It really was counter productive, (think of where I'd be had I not gone off). With a little thinking ahead and some early preparation there is no reason you cannot enjoy the meal with healthy, delicious, lo-carb alternatives. Here are my ideas.

    1. Instead of Ham or with ham try a whole chicken or small turkey breast as ham often times is loaded with salt and or sugars that would up the carb consumption.

    2. There is a great green bean casserole alternative that is sooo yummy and atkins legal, even during induction. Just be careful as you don't want to go over your cheese allowance for the day. I'll look for the link. IF I can't find it I'll type it up in a post to follow. I make mine using all fresh ingredients.

    3. there is this wonderful recipe on here at http://www.atkinsdietbulletinboard.c...ad.php?t=28708 . I'm going to try to make this ahead of time in 16 equal servings in a muffin pan. I'll let you know how it turns out. You could make this and freeze it and have it at Easter dinner and enjoy it while other people are eating their sugar desserts. The best part is you can eat your whole individual pie and have 15 more in the freezer for those 'cravings'. Again just dont eat more than one a day as you don't want to go over your cheese allowance. Depending on what rung you are on you could put berries on top. I can't wait to try this one!!

    Like I said any of you out there who have had experience in keeping clean through the holidays share your Hints. Right now is about the time people are planning their menu's for their dinners.

    I think what you said about NOT eating ham is an excellent idea! You can have prime rib, filet mignon, salmon, turkey, whatever you want!

    If you're going to someone else's house, bring one or two legal dishes to share. I can guarantee that your Atkins-legal dishes will be a hit! For the past few holidays, I've worked with my friend to create a menu that has legal foods, and I've always cooked legal dishes that I know everyone will enjoy. Cauliflower bake is ALWAYS a hit (who doesn't like cheese?), spinach salad is awesome, fresh veggies and dip are a GREAT idea for appetizers (surprisingly, the veggies are gone and eaten before the "bad" snacks are!), and bring a legal dessert.

    For Christmas I made cookies. For non-Atkins people I made frosted cut-out cookies and gingerbread men, for me I made peanut butter cookies and mantecaditos (little rum shortbreads that were made with protein powder). The Atkins cookies were GONE first!

    I've also made a legal cheesecake that EVERYONE loves!

    If, during the holiday, you're just visiting or going to a party, eat a legal meal before you leave, and while at the event, drink lots of water.

      how did you make your spinach salad? I think the green bean casserole I make will be a huge hit. Although my husbands family is pretty uncooperative when it comes to changing things up a bit and trying new things.

        The spinach salad is really easy!

        You will need:
        baby spinach
        bacon, cooked and crumbled (as much or as little as you want)
        chopped green onions
        cherry tomatoes
        shredded cheddar, or feta, or whatever kind of cheese you want!
        poppyseed dressing (you can make your own, Linda has a recipe)

        Put spinach in a large bowl, add 1 tbsp of dressing, toss. Add dressing 1 tbsp at a time to get just the right amount. The lettuce should be LIGHTLY coated, not drenched, you will need very little for this recipe. Top the salad with bacon, tomatoes, onions, cheese. Serve!

        Don't put the salad together more than 10 minutes before the meal or it will wilt.

            She has a a Thanksgiving menu, but it works the same for Easter. Check it out, I will be using some of those recipes for Easter.

              It really depends where you are on the OWL or Pre-Maintenance carb ladder.

              For example, one Easter/ Mother's Day, I brought a big bowl of fresh berries and another big bowl of whipped heavy cream and a hummus dip.

              So the best advice I can give you is
              1. Know what you can and cannot eat (your Carb ladder position)
              2. Know your CCLL
              3. Eat the foods that are legal for #1 and #2.

                The individual servings of the cheese cake turned out really well. I love them. Now I've got to individually wrap each one and freeze them in a freezer bag!

                  Steak and shrimp is what we're having...there's just a few folks who like ham in my family, so it's not a big miss if we have steak instead.

                    OMG I just tried the recipe that anonymous posted and it was probably the greatest caulifower dish I have ever tried in my life. Its sooo filling too. Its sure to be a hit at Easter!!

                      I made a different cauliflower dish today which was really yummy.

                      Break cauliflower into bitesized pieces and cook till not quite soft. Drain and let dry then roll in shredded parmesan.
                      Bake till golden.

                      I served them as a veggie side for Sunday Lunch, and my non-lc family scarfed them down.

                      I think they would also be awesome with a rich cheese sauce poured over after cooking and served as a supper dish.

                            What would Easter be without totally legal deviled eggs? We LOVE them. All nicely colored.

                            We are going to have brisket & ham
                            fresh green beans with bacon & onion
                            deviled eggs

                              I told my husbands family to make the cheesecake that I usually make. Hehehe. I'm evil like that. Its kind of like reverse field of dreams instead of 'if you build it, they will come" its going to be "if you bring it, then you may come". Funny thing is I don't feel one bit sorry for them!
