Can't eat enough veggies....

  • Can't eat enough veggies....

    I'm on Rung 1 and I just cannot eat as many veggies as we're supposed to. I'm not a veggie person anyway, but I'm getting very sick of these veggies and I'm afraid I'm going to throw in the towel. This is my second day and I'll post what I've had in these 2 days...I averaged 15-18carbs a day during Induction, so I'm trying to keep it below 23.
    Yeserday:
    3 slices bacon-0
    1oz mozz cheese-1
    2cups lettuce-2.4
    3tbs mayo type dressing(homemade)-3
    .5oz cheese-.5
    cube steak-0
    1/2c broccolini-8(didn't eat it all)
    1/2c fried turnips-3.8
    pork rinds-1(have a little more than 1 serving)
    2 oz cheese-2
    Total carbs:21.7
    Today:
    1.5 eggs-1
    6 slices bacon-1
    hot dog-3
    2c lettuce-2.4
    3tbs mayo type dressing-3
    1c fried squash-8
    1/2c spaghetti squash-3(didn't eat it all)
    hamburger meat-0
    Total carbs:23.4

    I'm still at 130.5(I was 132 last Sat), so I've lost 1.5lbs this week..But I've been at 130.5 for 5 days...TOM started 4 days ago, though, so that may be why???Anyway, I just can't do all these veggies!!!!Pleas advise on what I should do.......

    Are there any veggies you particularly enjoy eating? If there are, you can find newer ways of preparing them - broccoli au gratin, for example. Or maybe if you just need more variety, stop by a farmer's market or go grocery shopping and try something new, like chinese bok choy or endive and radicchio. If neither of those options sounds appealing, then just take it slowly and try a few new recipes a week. Other than this restriction, this is the way you'll (hopefully) be eating for the rest of your life, so enjoy your food! You can PM me for recipe/veg ideas, if you feel the need to

      check the lists and see what you like you can make sauces for your vegies soups are good to. make omlettes casseroles purree soem vegies and make dips or hid the purree in your meatloaf..

      You can eat the veggies if you want to be the smaller healthier person you want your Atkins to help you become. Atkineers are eating 6-8 cups opf veggies a day by the time they get to maintnenace.

        Might be in the preparation of the veggies. I really enjoy most anything fresh and then steamed (broccolli, cauliflower, cabbage, squash,etc) After they come out of the steamer add a pad of butter. Yummy!!!!

        But frozen is a whole different story.

        And you could try what we do with our son, prepare a veggie you really like and then eat new ones in small quanties until you get used to it. Our son liked green beans and carrots and now he eats almost any veggie. ometimes it takes awhile to get used to the taste.

          Okay, let's look at your menu.

          Hamburger meat is listed. You could mix a 1/2 cup of spaghetti squash into the raw meat and form that into a burger or meatballs. The spaghetti squash will add moisture and tenderize your burger/meatballs. Zucchini will do a similar thing.

          You can "hide" your veggies. That bacon you had. Try wrapping the bacon around some asparagus spears or zucchini sticks, then pan fry them until the bacon is crispy or throw it into the oven and cook until the bacon is crispy.

          The eggs you are eating. Make a frittata: beat eggs, added chopped veggies of your choice. Cook like you would an omelette.


          Also, if you haven't been measuring your vegetables, it's time to do it now. If you don't have a standard cooking measuring cup, now is the time to buy one. 1 cup of veggies isn't a huge amount, once you see what a cup is.

            I am also NOT a veggie person. Really don't care even for SALADS ... but I want to encourage you that this is really not that much of veggies to be eating. I don't want to repeat what the others have posted ... but here is my two sense...

            I made a low carb chili soup this weekend with chili-seasoned diced tomatoes, ground beef and lots of veggies (even green beans, zucchini slices, etc). I ate it with a spoon full of sour cream and guacamole added to each bowl and it was so yummy!

            I love broccoli chopped up and thrown into chicken dishes (divan, etc). Or broccoli au gratin.

            I ate out twice for lunch last week. At LONE STAR STEAKHOUSE they have an El Paso Salad with Steak. It was like a loaded baked potato, but as a salad base instead of potato. So much cheese and bacon!!! It was delicious!!! And then yesterday I went to DON PABLOS and had their low carb steak fajita salad and it was served with a mini platter of steak fajitas with grilled zucchini and squash and mushrooms and asparagus!!! It was also so great with their cilantro ranch dressing. I ate them all up, and again, I am not a big 'veggie salad' fan. But both of these salads were HUGE and I easily made my veggie consumption goals.

            I love roasted asparagus too ... and it is coming into season. I love fresh spinach (and the ATKINS lemon poppyseed dressing with bacon makes a very addictive lunch for me).

            Hope that tempts you to try something new...
