I was having my cucumber slices for lunch just now and also have some pepperoni with me, and I had a sudden brainstorm to make Low-Carb Cucumber Sandwiches. Instead of the bread with cucumber version, I took two slices of cucumber (you could remove the outer skin to have your sandwich crustless) and a slice of pepperoni, then dipped it in lc honey (splenda) mustard dressing (recipe from lowsugarsheila.com). Very good...
