I am going to move into OWL next week. To ensure I am still losing instead of gaining should I just weigh myself once a week?

There are different opinions on this... some can handle a daily weigh-in just fine, and some let that morning weigh-in determine their mood for the rest of the day.
A few things to consider:
It is normal for body weight to fluctuate for many reasons.
The number on the scale does not tell the whole story.
The scale is NOT the best gauge of fat loss.
Personally, I couldn't weigh daily during OWL... it would play too many head games with me. I started this WOE on a Sunday, and have weighed on Sundays since my re-start. I averaged a loss of between 1 and 2 pounds a week (including the 7 pounds I lost during Induction) till I met goal. This meant that some weeks I lost 2 pounds, some weeks I lost 1 pound, and some weeks I lost 0 pounds. Because body weight fluctuates, it would have driven me insane to watch the same pound bounce back and forth all week. I just got on the scale every Sunday morning, and it was what it was. MUCH easier to get happy over a pound loss for the week that way, than to watch the ride during the week.
That's just me, though... I'm sure that you will hear from many who weigh daily, but only "count" the weigh-in from a certain day each week. That would still stress me out, but each of us needs to find what works for us.
Oh! One other thing... why don't you add a few stats in your signature, and that will help others, help you when the time comes. Perhaps your Starting Weight, Current Weight, Goal Weight, Age, and Height. You can do that by going to the blue bar at the top and clicking on "Quick Links". Then click on "Edit Signature", and add whatever you wish.

I weigh daily and track the number. After a while you start seeing a pattern. I don't really do it to know what I weight "today" because it won't be that much different from yesterday or tomorrow. It's more for the long term stats. I forget and think I was lower or higher in such and such a month when I wasn't. This way I can look back and know exactly what's been going on instead of what my mind wants to tell me. It's just my way.Highest weight when I found Atkins in 2002: 225
