  • Confession.....

    Like I said my life has been crazy hectic..... this was my meals yesterday..

    LOTS of WATER - thankfully

    1 egg
    2 sausage patties

    10 macadamian nuts
    1 Atkins coconut/choc bar (3carbs)

    2 eggs
    4 sausage patties

    I know I'm missing my veggies...I went to the grocery and bought some more veggies, I'm going to try to get some time today and premake my salads, TRY to precook my chicken.

    The Atkins bar isn't causing cravings for me or anything so I guess I"m pretty ok with one every once in a while...

    I just need some quick fix ideas..I have all the right food in my fridge - eggs, cheese, chicken, turkey, sausage, broccoli, lettuce, cucumbers, celery...etc etc etc....I just need to get my meals prepared ahead of time so I can just quickly grab them and go...I've got 19 days til our trip and I don't see life slowing down for me before then...any quick and easy - make a bunch and put in tupperware to grab for later ideas??

    Which rung are you on?

    Anyhow, veggies are really, really, really, important. I have a question for you. Are you measuring your veggies using a standard cooking measuring cup or are you estimating them? When I began this WOE, I was surprized at the small amount 1 cup of "loosely packed" salad vegetables were and 1 cup of the "other" vegetables---I guess it's because I was used to those restaurant style salads, which average 4-6 cups per serving.

      Rung 1 - veggies..and there are none of them in what I actually ate yesterday...ugh.......
      I'm measuring them...and once I get organized I'm sure I can get them in and make it work..I'm just grabbing quick & easy stuff because I haven't had the time to really "cook" so to speak.

        I get the pre-washed baby spinach or romaine lettuce and sometimes just grab it and eat it with some salad dressing. I did that tonight for a quick dinner. Baby spinach with blue cheese dressing, gouda cheese, 2 slices of boar's head ham, and about 15 grapes. You could eat everything but the grapes. It was very quick.

            It gets easier as you go. You can also look at taking a day to cook up food on the weekend and either freeze it or put it in the frige. Then you can take it out and pop it in the microwave during the week.

              Thats what I was going to try to do this weekend..I have ALL the makings for a lot of good recipes that I've found so I just need to spend some time in the kitchen...I am so not domestic though..lolol But I'll make it happen!!

                I'm too cheap to buy the prewashed lettuce...and I find it isn't as fresh as the whole heads, but what I do is wash a bunch of lettuce myself (I have a salad spinner...great tool!) and put that in a bowl in the fridge and then I grate up about 2 lbs of cheddar at a time and put that in a bag. I chop a whole onion and put that in a bowl in the fridge and I buy the already crumbled real bacon at Sams. Then when I want a salad all I have to do is throw it together. I always have the makings prepared in the refrigerator and making a salad now is a no brainer and no effort. I also add some black olives to it..yum!

                Something else which is an easy way to get your veggies and quick is to get some radishes, cauliflower, broccoli, celery and whatever else you like and wash those and put them in a big bag. Then when you are making your lunch just grab a handful to go with whatever you eating. You can get some veggie dip for 1 carb a tablespoon and 2 tablespoons is usually plenty for a handful of veggies.

                I also just discoverd raw asparagus is quite tastey! I had no idea. Something different when the other more "standard" raw veggies get old. Raw Jicama is pretty good too, but I'm burnt out on jicama right now.
