Labarum - Blueberries are fairly expensive where I live also but after all the "blueberry" talk, I had to pick up a small bag this afternoon. I just finished baking a really simple, Atkin's friendly, blueberry cheesecake. The flavor is incredible and it's even pretty to look at too.
(Bragging on myself here because I'm not a cook and the majority of stuff I try to fix turns out inedible).
Here's how I made the cheesecake:
3 pkg. cream cheese, softened
3 eggs
1 cup sour cream
1.5 cups Splenda
1 cup blueberries
Mix ingredients together, gently stir in blueberries (just enough to make pretty swirls). Pour into pie plate (no crust) and bake for 45 minutes at 325º - 350º.
