  • Coconut Flour

    Has anyone used this? I saw it at the health food store when I was buying almond flour the other day. It appeared to be very low in carbs and a lot cheaper than almond flour (which cost me about $16 for a fairly small bag. ) Also, what rung would this be appropriate for? Other fruits? Thanks!

    A coconut is a nut. So it belongs in the Nuts/Seeds Rung.

    If you do a search of this forum, you might find a thread about coconut flour.

      I always thought of them as a fruit even though they have nut in the name. I just looked it up and apparently its a seed. I learn something new every day here. Cool that I can have it on the nut/seed rung. I tried doing a search but I didn't come up with anything. Thanks!

        I've used it and was very disappointed, it's really really dry, I had a hard time subbing it for almond flour in recipes.

        I tried it a few times and gave up. the bag has been sitting in the cupboard literally for months.

          One recipe I've had w/ cocoflour:

          YELLOW CAKE
          ½ cup butter, melted
          ½ cup coconut milk
          9 eggs
          ¾ cup splenda
          ¾ teaspoon salt
          1 teaspoon vanilla
          ¾ cup sifted coconut flour
          ¾ teaspoon baking powder

          Mix butter, coconut milk, eggs, sugar, salt, and vanilla.
          Combine coconut flour with baking powder and
          whisk into batter until there are no lumps. Pour batter
          into greased 8x8x2-inch pan. Bake at 350 degrees F
          (175 C) for 35 minutes or until knife inserted into
          center comes out clean. Cool before frosting/cutting

            Was it good, seems like it would be very 'eggy'? I did look up a bunch of recipes and tried a fewbut i just couldn't get over the dry texture of the flour....maybe i was just too used to almond meal

              I honestly didn't REALLY notice the difference in texture. My coworker made it. I noticed a flavor difference but that's all.

                That's a bummer. Maybe I'll try out that yellow cake recipe. 9 eggs does seem like a lot though. Thanks for the info guys.

                      I need to put this on my shopping list because I'm going to go broke buying almond flour. I found almond flour to be a lot cheaper at Trader Joe's than in my local grocery store.

                        Wouldn't that technically mean that all flours and ground down grains would be in the seed and nut rung since they all come from seeds and nuts?

                          Not really - only 'flours' made from nuts or seeds. Other flours made from grains and other grain-like things like rice come in on the grains rung.
