  • Tried Macaroons?

    Does anyone else like macaroons?

    I found a very simple recipe and made some this week.
    1/2 cup granulated splenda
    1 egg
    1.25 cups unsweetened dessicated coconut

    Mix the egg into the splenda till it is 'creamy' and then add the coconut and blend thoroughly.

    Put small teaspoons of the mixture onto a baking tray and bake for 12 mins at 300 degrees.

    It made 16 small macaroons - I ate a couple and they were great - tasted like real ones!! (DH ate the rest, bless him!!)

    There's a recipe for them on the Atkins site, and I think it calls for something else, too, but I can't remember just now.

          Oooh, that sounds good! I just bought some unsweetend coconut from Netrition and hadn't decided what to do with it. Thanks for sharing this recipe.

                Oh no!


                I can just see the posts from everybody whio doesn't have a DH or DW handy to eat the rest tomoorw. they will be like thet old Alka Sezlter commercials I can't believe I ate the whole thing

                SOunds like a great snack. wonder if folk could use liquid splenda and save some carbs.

                  Yes you are right they are not the kind of thing to just make for the sake of it!
                  I have just made another batch of them to take to my mother's house tomorrow for Sunday Tea so she wont feel bad that we dont eat her cakes etc! And so DH wont be sitting there eyeing the battenburg and shortbreads.
                  I know I probably wont get to eat more than a couple before they disapprear :yikes
                  The problem is you cant really measure out 1/4 of an egg so have to make the whole batch at one time.
                  Anyone know if you can freeze macaroons?

                      you can freeze real ones.
                      yep I have powdered egg just for that reason when I need fractions of eggs for my recipe cut downs.
                      I learned the hard way after smelling a coconut/groundalmonds/eggwhites/sweetner valintines cake cook in a slow oven all day. one serving just wasn't going to do it and I knew it as I eyed the pan after I cut the cake. Not sure if the coons,birds,squirrel,opossiums woodchucks,cats, skunk, deer or dogs got the rest but there wasn't any laying out in the grass in the morning and I had survived still cheat free.
