    I just totally found out that Zuchinni can be eaten raw.... I know I'm a dork. BUT OMG..... raw zuchinni strips with greek dressing... I now have a new comfort food to go with my brussel sprouts.

      Hmm interesting...is this like cucumber, which is good?

        Sounds delicious! I might give it a try - I bought a couple zucchinis yesterday to try Cleochatra's low-carb pizza crust recipe.

          I have always put raw zucchini and summer squash on my salads and eat them raw on a veggie tray for dips. They are so crunchy and yummy raw.
          People who say it can't be done, should not interrupt those doing it.

            Have you heard of zucchini pasta? I read on Laura Dolson's website about julienning zucchini into thin strips and sauteeing them, and then putting pasta sauce on that and eating it like spaghetti. I haven't tried it yet but it sounds intriguing.

              I have some zucchini and no way to cook it where I live now (complicated...), so I was wondering yesterday if it can be eaten raw. You just gave me an idea for dinner, thanks!

                I've been doing it this way all summer. I've put pasta sauce on it, fresh pesto, garlic, butter and parmesan and it is awesome each way I have tried it. I cut the "noodles" a little wider and make chicken noodle soup that is great. I had a huge crop of zucchini and summer squash this year and I have filled up the bottom of my freezer with squash prepared like pasta. All I have to do is take some out, steam it or saute it and I am ready to go.

                    I'm buying some zucchini tomorrow and trying that! Some people were talking about some handy thingiemabob that juliennes the zucchini into really thin strips but in the absence of that, I can just cut them by hand (well by knife) with good results, no?
