    Ok, I admit, I am probably reaching here because I am so annoyed that the scale has not budged in a while...after all I am exercising, eating exactly what is on the plan, staying in the appropriate carb range, not drinking diet soda, and drinking enough water to float Noah's boat. So, I am thinking that I must have a metabolism issue...after all, I am getting up there in age. A lot has been written the past couple of years on coconut oil boosting metabolism and I was thinking of giving it a try. There are no carbs in this stuff--only fat, and although research is sketchy, some people are convinced that it is a good way to boost metabolism and get the weight moving off. Any thoughts on this? Has anyone tried it with good or bad results?

    I know of people who have seen difference while taking the oil. I do not like the taste in food... I have a friend who puts it in her chia tea... it make me gag... but I use it on my skin... and wow... it is one the bet moisturizers I have ever used...

      Thanks! Maybe I will give it a try and if it doesn't help, I'll slather it all over my skin!

        I use coconut oil. Cannot say that I know that it does something for my metabolism. But I like. I use it do make chocolate bark. Mixing cocoa, splenda and coconut oil - putting it in the freezer to harden. It is very yummy.
        I also stir fry my veggies in it.
        You should try to find some that is extra virgin when you buy it.

          oh my goodness, but that sounds good! I bet it tastes a whole lot better than just chugging a spoonful! LOL

                i use it to cook my eggs in it - in the morning and I HATE eggs with brown edges. i have noticed that the eggs stay beautiful. it's almost like they are poached and i only use a teaspoon in the pan. I can't imagine taking any oil stright up and in coffee???? no thanks - I'll keep my cream! i had never heard of it bosoting metabolism. But I was in a lull and since using it I have been loosing 1.5-2lbs per week and not changing much else. i've been a pretty boring eater the last month. Of course that's not very scientific - but it certainly hasn't stalled me!

                BTW: I don't taste a difference at all....someone mentioned the taste....I don't get any fruitiness about it...i was actually hoping for that.

                  I think it might be working for me--I have noticed that i feel very hot after consuming the stuff. I have lost 2 pounds since i started taking it, but that weight was probably due to come off anyway as I was in a long stall. I am going to keep track though of my progess to see if there is a difference

                    I am going to try this.. the price of grapeseed oil jumped 3 dollars a big can. Annoying! But I need to either get another can or try something new, this sounds good.

                        I agree--my has gone the way of the snail. I found myself begging my doctor to just say I had hypothyroid so I could get something to boost my metabolism! LOL Maybe this is the ticket.

                          Karen...keep us updated on how it is working for you. I have a can of coconut oil in the cupboard but haven't opened it yet. I did open a can of coconut milk today as I ran out of heavy cream. Not near as good. Did try it with some ricotta cheese and a pkg of splenda and did remind me a little of hmmm...a cross between a coconut pudding and a macaroon. Will probably use up the rest of the can that way.

                          Here is a recipe I have that I have not tried...probably won't with so much Stevia..hmmm...not even sure if that would be liquid or powdered Stevia. Way to cheap to do it if it is liquid. Maybe would try it with Splenda. Anyhow...if anyone tries it let me know...

                          Virgin Coconut Oil Coleslaw

                          1 cup Virgin Coconut oil
                          2 tablespoon Stevia
                          1 teaspoon dry mustard
                          1 teaspoon celery seed
                          1 teaspoon salt
                          1 teaspoon white pepper
                          3/4 cup garlic red wine vinegar
                          Mix dry ingredients
                          Add vinegar
                          Slowly blend in VCO

                          Pour over shredded cabbage and enjoy.

                            That sounds really good Elsie! i will have to give it a try. I will keep everyone updated on my progress. So far I have lost 3 pounds since adding the coconut, we will see if it continues.

                              Congrats on the 3 pounds!!! How long were you in stall before that? How much are you taking? And how? Very interesting thread.
